Strawberry Rhubarb Pie Classic!

Strawberry Rhubarb Pie Re-Visit... With a few kittens!


This is a miniature version of my traditional strawberry rhubarb pie.... When I made the rhubarb custard pie there was enough crust left to do an 8" aluminum pie pan filled with springtime goodness! So the first pics are of this pie.... Before baking (Notice that I had to pretend on the crust, so this was my fancy pretense because there wasn't enough crust to lattice or cover... so I made it scalloped!!




And this is how it looked after baking it!!! Cute, small and enough for a half-dozen folks....  to make one this size, all you have to do is cut the lower recipe in half.....

What's not to love????

For our Rhubarb Extravaganza, we're playing with strawberries and rhubarb today, and that only makes the world a nicer place to live!!!!

First, use the crust recipe I gave you HERE for the pie crust because it's the best pie crust ever, and NO ONE can mess it up. Promise!

So here's the basic filling recipe... We're going to cook it on the stove top first (I do this with blueberry, cherry and raspberry pie filling too, to avoid runny fillings.... )  I use a deep dish pie pan so if you're using a standard glass Pyrex pie pan, you can cut the recipe by a third or so... But if math is NOT your forte, buy a bigger pan.  ;)

6 cups fresh or frozen rhubarb, cut in 1/2 inch slices
3 cups strawberries, sliced, fresh or frozen
1 1/4 cup sugar
2/3 cup flour
2 tablespoons butter

Cut rhubarb, mix with strawberries in large (4 quart) kettle....



Mix sugar and flour....

Heat rhubarb and strawberries over medium/low heat until the berries start to juice... then stir in flour/sugar mixture. Cover and simmer until hot. Add the butter, stirring now and again. Once mixture thickens and rhubarb turns somewhat translucent, it's ready for the pie pan!

Preheat oven to 425 degrees (hot oven)

Roll out bottom crust and place in pie pan. Pour in strawberry rhubarb mixture. Now you may top with a second crust, rolled out and placed over hot mixture. Cut 3 or 4 vent "slits" in crust, crimp edges and bake approximately 20 minutes... Pie does not take long because filling is cooked and hot.

OR....

Use the Dutch/French apple crumb topping recipe HERE to sprinkle on top.



 Bake same as above.

OR...


Roll out crust, cut into thin strips and criss cross over hot filling, creating traditional lattice work top. (That's my favorite way!)



The crimped edge has a tendency to burn but you can avoid this by folding a piece of narrow aluminum foil over edge before baking. It's a little awkward (foil likes to slip off) but it works great and your pie crust stays golden. Not brown.

For the crumb topping, a piece of aluminum foil over the top during baking keeps it from getting too brown.

And I had to get a picture of this beautiful shrine at Holy Cross church.... This is such a lovely glimpse into yesteryear.... and just beautiful. Every time I think of the sacrifice Mary was willing to make to be the mother of God, I am in awe of how feeble I truly am....


My computer died this week, so it's been a busy week of kids (last week of school here), using back-up computer (slow and not as much fun as my HP Pro that I love) and yesterday I went and made strawberry rhubarb jam with Sr. Maria, my high school Introduction to Physics teacher at Nazareth Academy....

And what can be bad about making jam at the Motherhouse????

Nothing!!!!

I'm attempting to download the back-up files into my fixed computer today, and if you want to whisper a prayer or two that it works, I'd be grateful! Technology is like any other modernization, electricity, plumbing, cars, etc.... great when it works, but boy we become dependent really fast, don't we?

  1. Oh Ruthy if you have one of those pies right now hanging around I'll be there in about 15 hours for tea!! I grew up on strawberry rhubarb everything. One day I'll find a rhubarb patch. I thought about planting a small patch in one of my planter boxes that can move with us as we move,w might be all around the country eventually, but it takes so long to wait for it to grown. When you want rhubarb you want it now. I found out about a pick your own strawberry patch here!

    1. Katie, it's hard to find, isn't it? And the other thing is that when I have it ready, it's hard to find customers to freeze it or make strawberry rhubarb jam. Vexed, either way!!!!!

  2. I miss rhubarb. Ruthy, every time you show these pies my mouth waters. Next time you come to Texas, you need to bring me some rhubarb. Or at least a rhubarb pie.

    Ugh on the computer woes. Technology is great when it works the way it's supposed. But when things go wonky, it ruins everything, including a good mood. Sorry you're having to deal with that. But those kitten!!!! Adorable! I wonder how my dogs would react if I brought one home?

    1. I will bring you rhubarb! Promise!!!!! And this is an old post, there are no kittens right now, we've only had one kitten this whole year. ONE..... And the kitten that almost died last year, that I had to hand feed like Pam is doing, is like a new pet dog. She sleeps with the dogs, she curls up with us, and she licks out the ice cream bowl every night. She's a dog. Isn't that the funniest thing?

  3. Oohhhh -- rhubarb. I've been hunting for it in my grocery store but there is none to be had. :-( I usually get it at my farmer's market but they are aren't open yet because of COVID-19. :-( And the mix of strawberries and rhubard is my absolute favourite!

    1. Kav, it's a tough year for finding things, isn't it? Maybe one of those produce co-op services? We have those here, they're drive-through so that folks can get things and get around Covid rules of contact. Something to check into....

  4. I love rhubard!. I don't need the strawberries in it...but won't deprive myself of the rhubard if there are strawberries in it! LOL We had a patch on the farm. When my parents bought an adjoining farm and moved us into the bigger house, my newlywed brother moged into the smaller farmhouse and claimed that patch! He was stingy with "rhubard"! He didn't even want Mom to devide it to start another patch! We would make stewed rhubard to go on ice cream!

    1. Oh, rhubarb and vanilla or strawberry ice cream is amazing! Jennifer, he was a brat. That's all I've got to say about that. It does better if you separate it every few years.... and mine has provided rhubarb plants for so many people! Silly brother!!!!

  7. Oh my I haven't had a rhubarb strawberry pie for SO long!! When I was a teen, we had a good family friend who had a garden and have us fresh rhubarb every year. I was just learning how to bake, so I made a pie from it....yummy! I'm hoping our farmers market can open in town because that sounds good to make.

    As for kittens, I would take one in a heartbeat Ruthy! But it's a wee bit far with you in New York & me on the West coast..lol! They're such cuties, I bet they will find their furever homes in no time :-)

    1. Trixi, I love kittens... and we've only had one this year, this post is from 2016.... but aren't they so cute? Precious babies.... our house cat Pumpkin is now spayed.... and the farm cat Honey Bunny had one kitten, and our long-time farm cat Fauna seems to like the neighbor's food better than ours. It's an odd country kind of thing. :) But the strawberry rhubarb pie is to die for!
