Chicken Parmigiana with Homemade Marinara

I made enough for an army.

I did it on purpose so I wouldn't have to cook on Friday last week, and it worked! :)

I love Chicken Parm and I love marinara, and some restaurants serve it this way, and others use traditional sauce...

I'm a big fan of this! Easy, delicious, and enough for the influx of troops!

I used 5 skinless, boneless chicken breasts, and one batch of sauce, and it worked out well.

Here's what you'll need:

5 skinless, boneless chicken breasts, cut thin and pounded out thinner
Italian bread crumbs (store bought or homemade)
3 eggs, beaten with 1/2 cup water
Flour
Olive oil
Griddle or big frying pan

Cut the chicken breasts so they're smaller and thinner. I slice them in half to make them half as thick, then in half the other way. Then I use my meat mallet to pound them thinner yet. This helps them to cook evenly and not take too long!



Dredge in flour.


Coat with beaten egg.


 Dip in bread crumbs, both sides.  I seasoned plain frozen crumbs with about a tablespoon of garlic, Italian seasoning, salt and pepper, very simple...



Fry on griddle or in pan until golden brown, then turn and do the same thing. When cooked, remove to cookie sheet.



When all chicken is done, top each cooked filet with mozzarella or provolone cheese. Set aside.

Turn on water for pasta.

For Marinara sauce:

1 large can crushed tomatoes
1 large can diced tomatoes
1/2 cup sweet onion, diced
Crushed garlic cloves (about 4) OR a Tablespoon of granulated garlic
Salt
Pepper
2 Tablespoons sugar
1 Tablespoon basil
2 Tablespoons parsley
1/4 cup olive oil.

Heat oil in 4 quart saucepan. Add onion and garlic, saute until tender and garlic fills house with best aroma ever, except for apple pie...



Add diced and crushed tomatoes, stir. Add rest of ingredients. Stir. Heat. Done.



I'm serious, this is mega-delicious and that's all there is to it.

NOTHING FANCY OR CRAZY and oh, so good!



Cook pasta once water boils.... Then serve with Chicken and marinara!
