Scalloped Potatoes and Ham Lifestyle Hack

It's a constant struggle, isn't it?

I mean, look at this:


and this!



When foods like this exist in the world, how can these compete?


Please tell me I'm not alone!!!

I know that this struggle - curbing my appetite and training it to desire healthy foods - is a first world problem. Not that long ago (like less than a hundred years ago,) folks in the US and Canada didn't struggle with their weight. Our parents and grandparents ate sensible foods all the time and saved the goodies (a reasonable amount of them) for special occasions rather than a daily habit.

But we are swimming in sugar and simple carbs. They're cheap. Easy to fix. Easy to eat. Our taste buds think they're delicious! And for some of us, they are highly addictive.

For several years I've been trying - with not too much success - to eat simpler. Cleaner. More vegetable-rich, more quality protein, more whole grains. And yes, with the new year, I'm doubling down again.



I've made progress through the years - I'm much healthier. Less pain, less inflammation, fewer pounds, more energy. People comment on the health of my nails (and I have never had a manicure!) - they are one indicator of a healthy body. So I'll keep on keeping on.

So how do we change from the Standard American Diet to a healthier one? Gradually. It's a lifestyle change, not a sprint toward smaller size clothing and a lower number on the scale. 

However, it's hard to make a lifestyle change when you feel like you're denying yourself from ever eating your favorite foods again! A life without chocolate? No way!

I attack this ongoing struggle on two fronts:
1) I find new, healthy recipes that we like, and
2) I adapt old favorites into healthier versions.

But I don't live alone. Hubby doesn't have the same problem with carbs that I do, and he loves his white potatoes! Why should he suffer for my body's quirks?

The solution? An easy hack that anyone can do.

The other day, I wanted to make one of my favorite recipes. Ruthy's Scalloped Potatoes and Ham, a recipe she shared in 2012, became a family staple at our house! (You can find her recipe here!)

But at this point in my getting-healthier-through-food-and-exercise journey, I don't want to eat a lot of white potatoes. At the same time, the other person in our house doesn't want to give his up, especially when the substitute is cauliflower. :-)

So here's the hack. Take a piece of aluminum foil and fold it so that it's rigid and will fit inside your slow cooker. I folded the bottom of mine to help it stand up.


Then put one of those crock pot liners in your cooker, easing it around the foil to make two separate pockets.


Peel and slice your potatoes and prepare your cauliflower...

I think the cauliflower half of this recipe would
have gone better with fresh instead of frozen,
but I had this in the freezer and the grocery store
is 30 miles away!

Dice your ham and make your cheese sauce (see Ruthy's recipe.) Then layer everything in the slow cooker, the potatoes on one side and the cauliflower on the other.


Cook in your slow cooker for 4 to 6 hours on high, or 6 to 8 hours on low. Or you can put the two versions of the casserole in two small baking dishes in your oven, 400° for about an hour.

The result? Two happy people!

Party Sized Scalloped Potatoes

Well, I made way too many!

I don't know what I was thinking, but I filled the monster big roasting pan about half-way full of scalloped potatoes... with cheese.... for about 12 adults.

And it wasn't like the only thing we were eating on Easter Sunday, either.

Oh my stars, it was a lot of potatoes, but you know what? Scalloped potatoes are one of those dishes folks around here like to warm up the day after.... and kind of like Thanksgiving turkey, the day after that, too!

So here's the monster sized recipe and feel free to cut in half... or quarters.... Or just buy one of those funny boxes of dried potatoes. :)

Au Gratin Scalloped Potatoes

7 lbs. potatoes, peeled, washed and sliced thin (This is where I love my Cuisinart food processor!)

1 cup butter
1/2 cup flour
6-8 cups milk (I used 7, I like my casserole a little moister.)
1 onion chopped small
1 1/2 lbs. ham or cooked pork, chopped
2 Tablespoons granulated garlic
Salt and pepper to taste
1 1/2 lb. sharp cheddar cheese, shredded

Melt butter in large saucepan or Dutch oven. Whisk in flour. Add milk, onion, garlic, salt and pepper. Heat over medium heat until mixture almost boils and thickens. Add cheese.


 Let cheese melt. Remove from heat.

Spray bottom and sides of large roasting pan. Pour enough cheese sauce to cover bottom. Layer about a 1/3 inch of potatoes over sauce. Sprinkle with ham.


Repeat until all potatoes and sauce are used up. Cover tightly and bake at 400 degrees for about two hours... or at a lower temperature for a longer time. Now that sounds funny, but I slow-baked them at 275 for about 3 hours (pretending they were in a slow cooker), then 400 degrees for the last hour and they came out great.


And then of course it was busy and Easter and I forgot to take a final picture!  But it was delicious and crowd-pleasing.....

And we had a great Easter egg hunt.... and wonderful desserts.... triple berry cheesecake and coconut cake (1/2 chocolate, 1/2 white, I think I'll call it "DIVERSITY" Cake! :) and apple nut strudel....

And we're making bathroom progress! Yay! Tub #4 was the lucky tub!!!!

It's in and tiling is being done and the floor is poured.... over the heated wire.... and then the floor goes in tomorrow!

Oh, happy days!!!!!

We're getting there. And we're so excited.

So that's it from the farm. Crazy windy today, power outages, downed trees, but we got to celebrate a 10 year old grandson's birthday.... and have cake.... and welcome six brand new baby kitties to the farm on Holy Saturday... more on them later!

Scalloped Potatoes and Ham, New England Style...

This is not easy-peasy.

It's not hard, either.

Just takes a little time. And feel free to cut the recipe in half, this one makes a big 13 x 9 or 15 x 10 casserole full. I think I actually used about six pounds of potatoes and my leftover spiral ham from Easter... Oh, yum!!!

I love my Cuisinart Food Processor. I told you how Lacey gave it to me for Christmas two years ago, right? Because Mandy bought me a blender and it came with a FREE FOOD PROCESSOR...

Such a deal!!!!  EXCEPT.... that the food processor didn't lock together, and it would come loose, and Lacey was fairly certain I would decapitate some small child when the whole thing blew apart some day...

Hence the Cuisinart edition which I love!!!!!



So here's the recipe, which is perfect when you have some left-over ham or pork chops hangin' 'round.

Potatoes (I usually do a big batch, so figure five pounds or so. I like nice big, firm russets or Idaho)
2 sticks butter
1/2 cup flour
Salt/pepper to taste
1 small onion, chopped fine-to-medium
4 cups milk
2 cups shredded cheese
Leftover ham or pork, cut or broken into bite-sized pieces (or leave it meat-free for my veggie-tarian buds!!!!)





Peel potatoes, place in pot of cold water so they don't oxidize. (turn brown)

Chop onions...




Melt butter in sturdy 3-4 quart kettle. Add onion and flour and allow to cook over low heat until onion is transparent, about five minutes.



 Add milk, whisk together, allow to heat on low-medium heat. Mixture will thicken somewhat, but thickens more with baking later...




Now the fun part!!!

For smaller batch use 8" x 8" or 9" x 13" pans, greased. For my batch I'm using the 15" x 10" Pyrex casserole dish I love!!!

Put 1/3 of potatoes through food processor 'slice' blade...




Lay them in pan.

Toss half of the ham/pork over them. Ladle about 1/3 of the sauce over this first layer. Sprinkle with half of the cheese.  Repeat: Potatoes, meat, cream sauce, cheese. Final layer should be potatoes topped with cream sauce. (Cheese browns too much on the top layer).



Cover with foil, bake at 400 degrees for about an hour and fifteen minutes, then remove the foil and allow top to brown for about 15 minutes more...  Total prep and cooking time is a couple of hours, but it's so stinkin' down home delicious that it's totally worth it.

And it smells so good while it's cooking, all creamy-potatoey-oniony!!!!
