Spinach, Egg, and Cheese Scramble

You should know by now that Mindy and I (and Missy?) are on our way to being Trim Healthy Mamas!


And you should know by now that this eating plan isn't all rabbit food and bird seed!

To refresh, here's the main point: don't eat a large amount of carbs and a large amount of fat in the same meal.

Point two: center every snack and meal around some source of protein.

When you have those two things down, then you're on your way to being a Trim Healthy Mama, too.

That is, unless you're a man. You're free to come up with your own terms for the man in your life. "Trim Healthy Man," "Totally Hunky Macho Man," "The Hottest Man." ☺

This recipe is so simple, you really don't need a recipe at all. It's one of my favorite breakfasts, or it also makes a good lunch.

Spinach, Egg, and Cheese Scramble

Ingredients:

Eggs (2 or 3, depending on how hungry you are)
2 Tablespoons to 1/4 cup frozen chopped spinach (or a handful of fresh leaves, chopped)
1 Tablespoon minced onion
1/4 cup shredded cheese
salt and pepper to taste


I keep a big bag of frozen chopped spinach on hand. I use it for tons of stuff. This recipe, a quick side dish, a nutritious addition to soups - you name it!

This is my new ceramic coated pan. The non-stick part is great!

The first step is to start your spinach and onions. Cook them in a tablespoon of coconut oil or butter. I like to use medium heat to give the frozen spinach a chance to thaw before the onions burn. Don't ask me how I learned that ☺



While the spinach and onions are sauteing away, scramble your eggs.


When the spinach and onions are fragrant and tender, pour the eggs into the pan.


Stir and cook everything together until the eggs are done.

Don't add 2 cups of cheese. The package is for
illustrative purposes only.

Add the cheese and stir it all together until the cheese is melted.


It may not be the prettiest dish ever, but it's healthy, quick and delicious!
