The blend of sharp cheeses, cauliflower and crispy-taco-seasoned crushed corn flake topping made this a crowd pleaser at our house, but the men went ballistic over it, so you know it's good!
For this dish I pre-cooked the cauliflower slightly.
I steamed it in a big kettle with a very little bit of water in the bottom, just enough to soften the cauliflower a little... I had three small heads that weren't big enough to sell, so I had fun with them in the kitchen, and I'm so glad I did!
Then I tossed it with this amazingly delicious cheese sauce:
1 cup heavy cream
8 oz. butter
4 oz. cream cheese
2 cups shredded sharp cheddar cheese
1/2 cup Parmesan (grated or shredded)
Salt and Pepper to taste (I used extra pepper)
Warm these until butter and cheese blends into heavy cream. Add in 2 cups sharp cheddar cheese (I used extra sharp cheddar cheese) and 1/2 cup Parmesan cheese. Whisk the cheese in until it melts. (I forgot to get a pic of this, so I'll describe it for you, darlings.... cheesy! :)
Toss over the steamed cauliflower... pile into a 13" x 9" pan.
Top with seasoned corn flake mixture.
1 stick (8 ounces) butter, melted
3 cups crushed corn flake crumbs
1/2 envelope Taco Seasoning mix (or 2 tablespoons Taco Seasoning from jar)
Mix together, spread over cauliflower in pan.
Bake at 350° for about 20-30 minutes until topping is crisped... and then serve and enjoy!
This is an amazing dish. I hope you try it. I hope the nice people in your house are just as happy as mine were! Unlike the wretchedly bad, horrible, no good cauliflower hash brown recipe I tried last week.... this was amazing!
