Fun Fall Party Mix

Happy fall! (Although with temps in the high 90's lately, it's difficult to say that and mean it!)

Each month our choir has a get-together after our rehearsal to celebrate that month's birthdays. At our party the other day, they served this wonderful mix! I took photos and decided to share.

I have no idea where the recipe came from (I'm not even sure who made the mix). So I'm doing my best to figure out what all was in it.


Pretzel Gold Fish
Peanuts
Mini peanut butter cups
Mini chocolate chips
Mini peanut butter or butterscotch chips (I wasn't sure which!)
Fall-colored M&M's

Mix together in whatever ratio looks good to you.


We also had pumpkin bread and muffins, salted caramel shortbread bars, pumpkin ice cream, and vanilla ice cream, and toppings to make sundaes. And a little healthier: apple slices and grapes.

It was quite a spread! And the tables were decorated with pumpkins and such. Very cute!


If you need a quick dish for a party, I think this party mix would be simple, fun...and tasty!

Roasted Chick Peas (Kitchen Fail!)

This post is going to be short.

I heard about roasted chick peas (some of you may call them garbanzo beans) at a Weight Watchers meeting.

I made them how I thought they should be made.

They turned out a disappointment. :(

Soooo... I wanted to share with y'all the RIGHT way to do this and went in search of a recipe (why didn't I do this beforehand?!).

I just found a recipe at The Kitchn by Emma Christensen that gives tips for doing it the right way.

For my fail: I opened the can of chick peas, rinsed them, tossed them on a cookie sheet with olive oil and salt, then roasted them for 20 minutes. They ended up chewy and not very tasty. I had been hoping for a nice crunchy snack!



In Emma's recipe, she says to dry the beans with towels or paper towels after rinsing them. Duh! That makes perfect sense. I think this was my biggest mistake.

She also recommends seasoning them after baking (if you're using anything beyond salt). And to make sure to use enough olive oil.

She said to bake them 20-30 minutes AND eat them hot. She even says if you let them cool, they'll get chewy. I think by the time I got the rest of dinner ready, the chick peas were cool. Plus, I didn't bake them long enough.

Now I know! I want to try to do this again. I'll have to let you know how my next attempt goes!

Low-Carb Friendly Pumpkin Muffin!

Low-carb lifestylers, rejoice! Now you can have your cake and eat it, too. 

Okay, so it's really a muffin, but let's not split hairs. Especially when it satisfies those pumpkin cravings without knocking us off the low-carb wagon.

Best of all, you can whip this up in no time for a luscious afternoon snack.

Here's what you'll need:
  • 1 flat tablespoon 1/3 less fat cream cheese
  • 2 heaping tablespoons plain Greek yogurt
  • 1/2 - 3/4 teaspoon vanilla OR 1 teaspoon lemon juice
  • 1 egg
  • 2 tablespoons golden flax meal
  • 1 tablespoon almond flour (if you don't have almond flour, you can use 3 tablespoons of the flax meal)
  • 3/4 tablespoon pumpkin pie spice
  • 1/2 teaspoon baking powder
  • 5-6 teaspoons Truvia, separated (you can use more or less, depending on your tastes. If you use another artificial sweetener, adjust according to your personal taste)
  • 1 generous tablespoon pumpkin puree
  • 1 teaspoon coconut oil
Put cream cheese, yogurt, vanilla or lemon juice (I prefer lemon juice because it gives the frosting a less intense taste and, to me, tastes more like cream cheese frosting) and 2-3 teaspoons sweetener into a small bowl.

Mix until smooth and set aside. This gives the sweetener a chance to dissolve.

Now grab yourself a nice size mug, crack the egg into it and whisk with a fork.
Then add your flax meal/almond flour, pie seasoning, baking powder, sweetener to taste (I usually use about 3 teaspoons/packets), pumpkin and coconut oil and whisk until everything is incorporated.

Place mug in microwave and cook on high for 60-70 seconds. You can also bake it in a ramekin or divide batter between two holes of a regular size muffin pan and bake at 350 degrees for 10-15 minutes. Those methods would probably make for a prettier muffin, but since I'm an instant gratification kind of girl, I usually go for the microwave. Besides, even in the micro, it still comes out with a nice, cakey texture.
**Note: My microwave is 1100 watts, so if yours differs, you'll need to adjust the time accordingly.

Once done baking, dump your muffin(s) onto a plate...

I like to cut mine in half before topping it with the frosting.
And I love that there's an ample amount of frosting, so that no bite is without.

Sorry I haven't been around the cafe much, lately. I'm still battling that overwhelmed feeling I talked about last week and have been avoiding the computer like the plague. 

I must be craving simpler times, because I've taken to listening to the Traditional Christmas station on Pandora. What could be more soothing than the croons of Perry Como, Bing Crosby and Andy Williams. Just a few of the many reasons I love this time of year. And for the rest of the year, yes, I have the Perry Como station on Pandora, too. :)

I wish they'd air all their old Christmas specials. Man, I used to love those things. Looked forward to them every year. I did see some of the old Andy Williams ones on PBS a year or so ago. What a treat for this sentimental soul.

Black Forest Ham Pinwheels

Jan here, astounded that it's time to turn that calendar page to 2014. Already! Does anyone else feel like 1994 was just last year?

So, how do you celebrate the new year?

Once in awhile we'll have someone over, but more often you'll find the six of us ringing out the old year quietly...if you count playing a game of Mexican Train Dominoes quiet!

We have a tradition of setting out snacky foods and grazing all night.

Well, at least until 10:00 or so. When we lived in the eastern time zone, we'd stay up and watch the ball drop in Times Square, but it loses a little of its punch when you're watching it two hours after the fact!

I like to try a new snack food sometimes to help mix things up, and this year I found a winner. I'm sure you're all familiar with these pinwheels. I've seen them in the deli cases at supermarkets, and they're always a hit whenever someone brings them to my son's office potluck.

In fact, it was after this year's potluck that my son asked me to try making them. So I searched online for a recipe, found a few, changed things up a bit, and came up with a treat I couldn't resist!

Here's the recipe:

Black Forest Ham Pinwheels

Ingredients:

8 ounces cream cheese, softened
1 tablespoon minced onion
1 teaspoon dill weed
1 teaspoon horseradish (not horseradish sauce - get the real stuff)

8 ounces deli-style Black Forest Ham, sliced thin
I know this says "1 lb family size" - I made two batches and used it all.
4-5 flour tortillas, about 10" in size, room temperature (you can also use the low-carb tortillas)

This is so easy. First, mix the cream cheese, onion, dill weed and horseradish in a small bowl. Taste a smidgen, and add salt and pepper if you want. Remember that the ham is also salty, so you want your cream cheese mixture to be on the un-salty side.

The next thing to do is to lay a piece of plastic wrap down and lay a tortilla on top of it (you'll thank me later).

Spread some of the cream cheese mixture on one tortilla, thick enough to cover it, but not too thick. Lay slices of the ham in a single layer all over the tortilla. Then roll the tortilla up from one edge (not the plastic wrap - yet). Roll it  fairly tight, but you don't have to be a bully about it.





Now wrap the plastic wrap around it and set it aside. (This is where you'll thank me! Just try tearing off a piece of plastic wrap while you're trying to keep your tortilla from unrolling.)

Repeat until the cream cheese is all gone.

Refrigerate the rolls for at least two hours. When you're ready to eat them, unwrap them, and cut in 1/2-inch sections. (Let your minions snack on the ends).

Like most recipes, you can change this up to suit your own family. Here are some ideas for variations:

*Add dried cranberries to the cream cheese (leave out the horseradish for this one!)
*Use turkey instead of ham, or roast beef, or pastrami.
*Use nuts and dried fruit, and leave out the meat altogether.
*Add fresh chopped mushrooms.
*Add a layer of Swiss cheese on top of the meat.

The variations are only limited by your imagination!



We're planning to start our New Year's Eve celebration tomorrow night after daughter Carrie gets home from playing in the symphony concert. This year's concert sounds like fun - it's a Beach Boys tribute with a band called "The Kahuna Beach Party". (She's been humming Beach Boys tunes all month.)

We'll get the dominoes, set the snacks out, and spend the rest of the evening trying not to get too many points!

Oranges with a Cute Little Name

Missy, here. The Belle. I had another post ready to go (if you're interested in risotto, be sure to come back next Friday!), but I decided this one can't wait. Because the little fruit I wanted to talk about is at the end of its season (the season typically ends in April).

And you don't want to miss out.

(By the way, I have no relation to the company and get no benefit from talking about it!) :)

I'm talking about Cuties.



California Mandarins.

I've always heard of these little fruits and thought of them as kids snacks--a gimmick that was probably over-priced. So I bought other types of clementines and tangerines and other small oranges, trying to find something sweet enough for my taste. I did find a fantastic tangerine this winter called Minneola, which was very sweet, and I really enjoyed them.

But on a recent trip to the store, I found large bags of Cuties on sale and decided to give them a try. They were advertised as little (perfect for kids), seedless, easy to peel and sweet. You've probably all seen the TV commercials, haven't you? I think they need to also market them to adults.

When I tried one, I was totally hooked! They're everything they say they are and more. I bought another case of them at the grocery last week and tend to eat them two or three at a time!



Here's a shot of me holding one from the later batch. The later ones were a bit larger but every bit as sweet and easy to peel. With the earlier batch, you could pop a whole one in your mouth. Very small and portable. My daughter loves to take a couple for lunch.

So I've found a new favorite snack--healthy snack! What's your favorite healthy snack?

Jan's Wonderful Cheese Spread

Merry Christmas!!!!

I don't mean to scare you - - but Christmas Eve is only

one week away!!!!!

So, are you ready?

Today I'm sharing another easy-peasy snack for you to share with your friends and family.

Jan's Wonderful Cheese Spread

Ingredients:

1 (8 ounce) package cream cheese
1 jar Kraft Old English Cheese Spread
1/2 cup mayonnaise or salad dressing (like Miracle Whip)

2 teaspoons chili sauce
1 teaspoon minced onion
2 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1 Tablespoon ground mustard

2 cups shredded sharp cheddar cheese



This goes together very easily using a food processor, but I've also done it by hand and it still works. 





First, blend together the cream cheese, cheese spread and mayo until they're smooth and creamy. 

Then blend the chili sauce, onion, Worcestershire sauce, garlic powder, and ground mustard in a small bowl. 

By mixing these ingredients together before adding them to the cheese, you avoid those pockets of garlic powder in one bite and Worcestershire sauce in the next.

I like to avoid surprises like that :)

Add the spicy stuff to the cheese and mix thoroughly.

Finally, add the 2 cups of shredded cheddar and mix some more. Easy. Just what you need the week before Christmas!

Serve it with crackers and enjoy :) It's also good on celery sticks...Mmmmm....



One thing I love about this recipe is that you can switch it around - make it your own!

For instance, I often switch this ingredient:

My family loves the kick. You can ramp up the sizzle or tone it down to your heart's content!

You can also shape the whole mess into a ball ~ like one of those pretty ones you spend big bucks on at the grocery store.

Just refrigerate the cheese spread, then shape it into a ball and roll it in chopped walnuts or pecans.



And a thought to leave you with:

We live in an evil world, and once in awhile we get a glimpse of just how evil it is.

But evil isn't the only, or the most powerful, force in our world. God's grace is evident everywhere we look....

Comfort Food, God's smile and Chocolate...

The Lord is my shepherd....

I love those words. I love the simplicity of Christ, the shepherd. Lambs, sweet and docile, being led...

Except that I'm often the stubborn ewe, the know-it-all that's always heading for a greener pasture.



Humans are such silly, frail things!

And that is why God made chocolate.  :)

I'm convinced of it.



Or maybe he knew women would have to deal with monthly cycles and men.

That had to be it!

Or...

Maybe he understood that although children should outgrow hissy fits by age five, some drama queens are still hissing at fifty-five....

OR....

Maybe he just crafted the bean, did a little roast-taste-test, added some sweet sap/sugar and smiled.

I think that might have been when the sun first came out. That God-smile, shining from above, at the taste of chocolate.



Changes in life make me reach for Ghirardelli... Rough days. Celebrations. Girlfriend Chats....

So what makes you reach for the good stuff? For my husband it's popcorn. :)



I'm convinced this is why we're still married, because he doesn't like chocolate and I'm not a big popcorn or potato chip fanatic...

So we never steal each other's treats!

Favorite Friday--Pigs in a Blanket!

Missy, here. I recently hosted my book club at my house. My kids get home from tennis practice around 6 pm, and I knew I needed to make snacks for book club that could double as dinner for the kids. Soooo...I headed to the grocery store (at 5 pm that day!) and decided to pull out an old favorite from when my kids were really young. Pigs in a blanket. I figured I'd leave them whole for the kids and cut into appetizer size for my friends. :) I also grabbed bags of pre-washed fresh veggies and served with Ranch dressing. Then sliced up a fresh pineapple. Easy to prepare for friends and hungry kids.



Ingredients:
Canned crescent rolls
Hot dogs (I like turkey sausage)
Sliced American cheese


Tear cheese into small strips.
Slice an opening in the middle of each hot dog, trying not to cut all the way through, leaving about a half inch uncut on each end (prevents cheese from leaking out).


Stuff a cheese strip or two inside each hotdog.


Separate the crescent rolls. These were generic and didn't pull apart as well as what I'm used to. I had to do some patching like Ruthy has talked about with pie crusts! :)


Lay stuffed hotdog at wide end and roll toward the point of the crescent roll.


Spray baking sheet with cooking spray. Put the wrapped hotdogs on the sheet cheese-side-up. Bake according to package directions. Although they'll probably need to bake a bit longer. I don't remember how long, since my book club ladies had arrived by that time. We were chatting so I didn't pay attention. :) I think it was about 10 extra minutes, long enough to make sure they weren't doughy.

I only snapped a shot in the oven. No finished photo since I was occupied. I sliced them in quarters for the appetizer size (and then, since I hadn't had dinner either, proceeded to eat four! LOL). Kids just grabbed two or three whole hotdogs each. Yep, hungry from tennis. :)

The World's Best Pimento Cheese!


The Belle, here, with a good ol' southern favorite for you.

For years, my in-laws lived in Augusta, GA. And I think the world's best pimento cheese comes from there, from a woman that went to their church. She has a business called Very Vera. At Thanksgiving, my mother-in-law, who now lives in south Georgia, ordered a shipment of Vera's pimento cheese for us to eat over the weekend. I was in heaven! She even sent a container home with us (that lasted about five minutes.) :)


As I was about to throw away the container, I had stroke of genius: To save the label and see if I could come up with my own similar recipe. I have to say, it wasn't as good. But it's pretty good if I can't always have the real thing. And yep, I thought I'd share my recipe with you. :) I just made a small batch to test, so this'll be perfect for lunch for 1 or 2. But if you're making this for your family, you may need to double or triple. (I'm sorry I didn't think to do photos!)

1/4 to 1/2 wedge/block Cheddar Cheese (I used Hoop cheese that comes in the red wax because it's my favorite), grated (do the larger shred size so it doesn't all mush together)

Mayonnaise to taste. (I don't like mine as mayonnaise-y as some may. Just enough to hold it together)

1 small strip Roasted Red Pepper, chopped. I planned to roast my own but ended up using jarred peppers. They were a little too mushy but would do in a pinch.

Dash of Emeril's Original Essence (I used this in place of the spices on Vera's label.) Do this one dash at a time and taste. Mine was a little too salty.

Fresh, course ground black pepper to taste.

Dash of Cayenne pepper to taste. Vera's has a nice hint of heat.

Mix it all up and serve on a sandwich, with crackers or with pita chips.


Be sure to check out Vera's website. She has some amazing foods they'll mail to your home! My in-laws used to mail us cakes on all our birthdays (yummy strawberry or carrot or red velvet!). And sometimes for a special treat they'd also send me the pimento cheese. :)

By the way... I was thrilled one day when I happened to turn on The Food Network and saw Vera in a Thrown Down with Bobby Flay! They were competing with carrot cakes. I love her carrot cake! But I won't tell you who won. You'll have to click the link and go watch it. :)

I Did It! Kale Chips!

Missy, here. I finally made the kale chips that Valerie and Mary recommended last week. I thought I'd share!

I got one bunch of curly kale. Washed it. Then laid it out on paper towels to dry. I actually ended up pretty much hand drying the leaves so I didn't have to wait.


Then I broke it into bite-sized pieces and placed in a large bowl.

The video on YouTube (Thank you, Mary!) said to sprinkle on 2 teaspoons of olive oil and 1/2 teaspoon of salt (I use Kosher salt). I LOVE olive oil. In fact, I could just about drink it from the bottle (my favorite is Colavita). So I got carried away and probably used more like a tablespoon plus. It was really more than I needed. I also over-salted. So follow the directions and measure out 2 tsp. oil and 1/2 tsp. salt! :)

Then dig in with your hands and rub until all the leaves are totally coated and shiny.


Place in a single layer on two baking sheets.


Bake 350 degrees for 15 minutes.




When they come out, they're a little brown around the edges. They're crunchy and yummy!! I'll do this next time I'm craving a salty snack. Thanks to you ladies for sharing!
