Grilled Potatoes

Do you ever see a recipe that looks so perfect that you can't imagine why you didn't think of it before?

That happened to me this weekend.

Now you may all have heard of this before, and I'll look like the only ignorant one, but here goes.

I happened to see a video on Facebook about roasting potatoes as if you were doing kabobs.

Brilliant, right?

I decided I had to try it.

I bought a couple of pounds of small potatoes (a mix of red and Yukon Gold).

I decided to parboil them and peel them because I wasn't sure how long it would take to cook them through.

So I boiled them and then let them cool.

I poured some olive oil over them and added lots of herbs and garlic, and left them to marinate a bit. I used basil, dried garlic, and oregano, but I was kicking myself for not thinking to add in rosemary. That would have been perfect.

After about 20 minutes, I skewered the potatoes. In the original video, she used bigger potatoes and sliced them in half. I used them whole since I had small ones.


I soaked the bamboo skewers in water before using so they wouldn't burn.




If you have an outdoor grill, these will be perfect to grill. I don't so I roasted them in the oven.

SOOOOOOOO  DELICIOUS!!!!!!!!!!

Honestly, I don't even remember what I served with them. I only remember how delicious the potatoes were.
