Lighter Spaghetti Pie

I tell you folks, especially you Southerners who were reeling under your recent snow event, it's February.

Yes, February. That means snow, not flowers. Short days, cloudy days, and cold air.



But it also means comfort food to the max!

My most recent comfort-food craving sent me to one of my Taste of Home publications. I buy these every once in awhile. I enjoy browsing through them to find new recipe ideas.

On a recent browse-through (not in the magazine pictured) I found a recipe for spaghetti pie - something I had never made before - but it sounded delicious! I adjusted the recipe to match the items I had on hand, and the result was delicious!

Lighter Spaghetti Pie

ingredients:

4 oz uncooked angel hair pasta
2 large egg whites, slightly beaten
1 Tablespoon butter (softened or melted)
1/4 cup Parmesan cheese

1 pound ground beef, cooked and drained (you can substitute ground turkey)
1/4 cup chopped onion
8 oz can tomato sauce
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper

1 cup lowfat cottage cheese

1/2 cup shredded mozzarella

Preheat your oven to 350°.

Cook the angel hair pasta according to directions and drain. In a medium bowl, mix the butter and egg whites. Add the cooked pasta and stir until the pasta is coated (using two forks instead of a spoon works well.) Add the 1/4 cup Parmesan cheese and mix in well.

Distribute the pasta in the bottom and sides of a 9-inch pie plate.


Meanwhile, brown the ground beef, adding the onions when the beef is about halfway done. When the meat is cooked, drain it, then put it back in the pan.

Add the tomato sauce and herbs, mixing well.

Spread the cottage cheese in the bottom of your spaghetti crust.


Then add the meat and tomato mixture.


Bake for 20 minutes at 350°, then sprinkle the mozzarella cheese on top. Bake for another 5 minutes or so, or until the cheese is melted.

What makes this recipe "lighter?" If you notice, the recipe had very little fat in it - only 1 Tablespoon butter (if you drain your beef well or use ground turkey white meat.) Using egg whites instead of a whole egg and low fat cottage cheese all help keep the fat content down. Angel hair pasta instead of regular spaghetti helps lighten up this recipe, too.

This dish met my comfort-food cravings! Easy and delicious!


While I cook, I often watch the sunset in the western sky.


It's worth every second! And Jack enjoys the deck in the evening, too. He watches the deer walk by and the neighbors as they drive home.


Does he look a little bit lonely to you? Maggie-Cat doesn't play with him as much as he'd like her to.


Maybe he needs a playmate closer to his own age (and energy level?)

Garage Sales and Veggie Dip

Jan here, with one of my favorite subjects: Garage sales. Yard sales. Rummages. Basement sales. Thrift store bargains. Whatever you want to call them.

Yup. I'm one of those. But I know I'm not alone here! Right, Ruthy???

Because it's all about living well on the means God has given us.

Garage sales were my regular Saturday morning addiction when our children were young.



That pair of OshKosh overalls cost fifty cents, if I remember right, and lasted through our four children before they were passed on. How can you beat that for a bargain?

Even though my garage saleing days have slowed down quite a bit, we still find time to stop by one or two on a Saturday morning...especially if they have books.

I always look at the books! See what I found last week?


I'm sure you're familiar with the Taste of Home magazine. Their cookbook comes out - what? - once a year? They sell it through direct mail advertising, and I've always thought I might get one. Someday.

25 cents.

Oh, sure, it isn't new. In fact, it's eight years old. But the previous owner didn't put a lot of wear and tear on it.

And I get a bunch of new recipes to browse through without sitting at my computer! Win/win!!!

Here's one of the recipes I found in this fabulous new toy. I changed it a bit to make it full-fat and zero sugar, rather than low-fat and higher sugar. You can switch the types of ingredients to make it fit your diet and lifestyle. :) The version I made would be an "S" if you're doing Trim Healthy Mama.

Creamy Herbed Salad Dressing

ingredients:

1/2 cup mayonnaise
2 Tablespoons milk
4 teaspoons white vinegar
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon Truvia, or sweetener of your choice
1/4 teaspoon garlic powder
1/4 teaspoon pepper



Whisk the mayo, milk and vinegar together in a small bowl. Then add the rest of the ingredients and whisk.


That's it! Super quick and easy!

You can have this dressing over a bowl of greens or your favorite chopped salad...

What? You're not sure what a chopped salad is?

Talk about easy! Just chop your favorite greens and veggies together and mix them in a bowl. Add dressing and toppings, and eat it with a spoon. No more chasing that errant almond sliver around with your fork!

But if you're in the mood for a healthy snack, use the dressing this way:

This snack has 2 Tablespoons of the dressing, a few carrots
(carrots have higher carbs, so I put a limit on how many I include
in a Trim Healthy Mama S snack),
and as many celery sticks as I want. 

I wish I had some radishes in the fridge to go with this!

Taste of Home Pistachio Cake for St. Patrick's Day!


This delightful recipe first appeared in Taste of Home magazine (per their website) in the Dec/Jan issue, page 35. It became a crowd-pleasing favorite, first because it's absolutely delicious, second because it was green! How delightful!  And third?  You got it! Easy-Peasy!

So here it is, Pistachio Cake from Taste of Home!


Ingredients

  • 1 package (18-1/4 ounces) white cake mix
  • 1 package (3.4 ounces) instant pistachio pudding mix
  • 1 cup lemon-lime soda
  • 1 cup canola oil
  • 3 eggs
  • 1 cup chopped walnuts
  • FROSTING:
  • 1-1/2 cups cold milk
  • 1 package (3.4 ounces) instant pistachio pudding mix
  • 1 carton (8 ounces) frozen whipped topping, thawed
  • 1/2 cup pistachios, toasted
  • Whole red shell pistachios and fresh mint, optional

Directions

  • In a large bowl, combine the first five ingredients; beat on low speed for 30 seconds. Beat on medium for 2 minutes; stir in walnuts.
  • Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
  • For frosting, in a large bowl, beat milk and pudding mix on low speed for 2 minutes. Fold in whipped topping. Spread over cake. Sprinkle with pistachios. Refrigerate for about 30 minutes before cutting. Garnish with whole pistachios and mint if desired. Refrigerate leftovers. Yield: 12-15 servings.
