It sounds wonderful, doesn't it? Like Autumn day wondrous, melt-in-your-mouth deliciousness, crisp walks in the evening beneath a harvest moon and lazy Sunday brunches in front of the fire.
Hey.
Peeps.
Wake up and smell reality, wouldja???
This is me, talkin'. And it's Simply Saturday, Easy-Peasy time and I had the most amazingly wonderful breakfast at "Le Peep" last week...
We don't have Le Peeps in upstate New York. Simply put, I fell in love. And ate too much. And loved every minute of it.
Now I'm traveling again this weekend, and I'm doing this from a hotel lobby and I didn't bring my camera cord and the smart card from the phone doesn't fit this computer so I may or may not have borrowed this picture of this amazingly delicious worth-every-calorie concoction.
It it THAT good. Promise.
First make French Toast:
2 eggs, beaten
1/2 cup milk
1/2 tsp. vanilla extract
1/4 tsp. nutmeg
1/4 cup sugar
Beat the above together with a whisk.... Do not be afraid to mix well....
Heat griddle or flat-bottomed frying pan with just a thin glaze of oil. When hot, dip bread (you can use raisin bread, regular bread, Italian bread, wheat bread... whatever you like!) into the egg/custard mix and set onto hot griddle. Turn heat down to medium. Repeat with several slices of bread. Turn when first side is golden brown....
This only takes a couple of minutes, so before you do all that, do this!
Take 4 ounces cream cheese, softened.
Mix in 1/4 cup sugar, 3 Tablespoons canned pumpkin, 1/8 teaspoon cloves, nutmeg, cinnamon and a hint of lemon zest if you have a lemon handy. Otherwise, use a teaspoon of lemon juice.
Mix well. Heat slightly in microwave, about 30 seconds or so.
Place French Toast on platter. Spoon about a Tablespoon or more of cream cheese along the lower triangle half of the bread... Fold upper triangle half of bread over.
Sprinkle with powdered sugar. Drizzle with caramel syrup, if desired.
And there you have it, an absolutely delicious Autumn breakfast treat, amazing.
This would be a great crowd pleaser for a holiday breakfast....
Seriously.... How could that possibly be bad???? Right????
