BBQ Pork Sandwiches

Every year about this time, I hit an eating crisis. I think we all do. We're tired of "special" meals and fancy foods, holiday goodies and leftover ham.

Okay, maybe it isn't a crisis, but it's a signal that it's time for a change. For me, that means scrounging in the bottom of the freezer to see what's hanging around from the old days - i.e. pre-Thanksgiving meals - and I found something great for supper the other night!



Our grocery store still has a meat department where you can special order certain cuts and select a special steak, pork chop, or chicken quarter from the display case. And what happens to the meat in the display that doesn't sell?

It becomes a bargain hunter's dream come true!

This meat isn't dated or in bad shape - it just isn't as fresh as the meat they're filling the displays with the next day. So they package it in large bundles and sell it at a steal of a price. We usually get the bundle that includes thin-cut pork chops and beef round steaks, a few seasoned chicken leg quarters and some chicken breasts.

We bring it home and I freeze it to use later...like the first weekend of January!

On Saturday I sorted through the things at the bottom of the freezer and found two of those packages of pork chops. Perfect for quick BBQ Pork Sandwiches!

These are super easy.

First, I cooked the pork until it was fall-apart tender. Even starting from frozen, this step was a snap in my Instant Pot.



In your crock pot or oven, or on top of the stove, cook it low and slow for several hours. Be sure to keep it moist if you're using the stove or oven!

After the pork was cooked, I diced some onions and threw them in, then added some garlic powder (about a teaspoon) and a generous amount of barbecue sauce (any brand will do - pick your favorite.) And add whatever else sounds good. Worcestershire sauce is always a good choice.

I pressure-cooked everything on high for another ten minutes, then let the pot do a natural pressure release while I got the buns ready.

Another item I stock up on during pre-Christmas sales are these Sister Schubert's rolls. I baked off a few for our sandwiches.

After the pork had been releasing pressure naturally for ten minutes, I did a quick release to bring the pot down to normal so I could open it. I gave it a good stir (to mix in all the ingredients and break up the pork into bitsy pieces) and it was ready to serve.



A great simple meal for the two of us, with leftovers for lunch sometime this week!

And even though it's the first weekend of the year, our weather has been mild. Yesterday afternoon was beautiful, so we drove up to the Mt. Rushmore area and went for a short saunter with Jack.


The view was beautiful no matter which direction we looked.


And Jack had a wonderful time. Do you know how many SMELLS there are in the forest? And he sniffed every single one. :-)

  1. Mmmmm. I love pulled pork, though to be honest, I usually order it from our local BBQ joint.

    Jack's saunter reminds me of the John Muir piece you posted on FB the other day. There is a piece about him and the National Parks that comes up each year about this time in our ELA work in school. I shall now think of Jack when I read it.

    Happy first Monday of 2020. For me, it's back to work.

    1. I love that John Muir quote! "Sainte terre" = holy land, and that's what mountains are, aren't they? So now, instead of hiking, we saunter (even though sometimes we get a bit out of breath "sauntering" up a mountain!)

  2. We are doing pork chops tonight 😀 I was trying to decide what to do with them as they are 2 thick cut that didn't get used in something else I made the other day. This looks like a winner. As of today the Instant pot is more of a friend then it has ever been. Our weather has been nice too, but we did not have a chance to go explore. Maybe another day!

    1. The pork becomes more bbq chunks than pulled pork - but it's a great way to use those extra pork chops!

      And yes, with your new schedule, you'll be using your Instant Pot every day!

  3. Look at Jack. He's so happy to be out running around. This recipe looks yummy, too. I still haven't delved into using my Instant Pot much, yet I got a Ninja Foodie for Christmas, so the time has come. I've seen them use the Ninja Foodie on Food Network a lot, so I'm quite intrigued. Now to gather the courage to use it.

    1. I love my Instant Pot! But I've never heard of a Ninja Foodie (that tells you how much I watch the Food Network - not at all!) You'll have to tell us how it works for you.

  4. What a gentleman young Jack is becoming! So dashing in his alert stance. Or is he hamming it up for the camera? And he's off leash already? What a good boy!

    Gorgeous hiking weather. Ours has been so wonky. Like today it was supposed to be 1-2 cm of snow...just a dusting. Ha! Just saw a man skiing down the street and it's not even noon. We have plenty more of that white stuff to come. I need skis on my walker. :-)

    1. "Just a dusting!" I don't think so! Enjoy the fresh white stuff. And I agree - skis on your walker sounds like the way to go. :-D

      And yes, Jack is becoming quite the little man. Seven months old today! And off-leash is a new thing - only in controlled situations and no distractions. We were all alone at Breezy Point yesterday and it was the perfect situation for him to practice his off-leash training.

  5. This... right here.... has given me the inspiration to pull out my Instant Pot, dust it off, and make barbecue sandwiches! I'm doing it this week and I will love it because it's easy, filling and marvelous... and while I'm watching what I eat to offset those weeks of indulgence, the men in my life will pile on the rolls and celebrate you, Jan!!!! And I'll have a salad on the side. Maybe. :)

    1. I had mine on rolls this time - they're more like sliders with the Sister Schuberts.

      Have fun with your instant pot! These will be more like pulled pork sandwiches with a different cut of pork. We got boneless ribs in our meat bargain pack at the grocery store today, and I think they'll be perfect for this dish!
