A Tale of Two Quarantines Part Two

So last week you got my daughter's Quarantine Cooking Adventures.

Unfortunately for you, this week you get my totally uninspired version.

In my defense, for the first three weeks, I was teaching classes online and under deadline on my next LIS. So cooking wasn't high priority.

  2. Wow! Six weeks? What are you doing for fresh fruits and veggies? Love the lentil theme you have going. :-) And I just started adding chickpeas to my salads because of you inspired me too. :-) Still haven't delved into kale, though. Not that I don't like it. My daughter cooks with it a lot and I love everything she makes. I just worry it will go bad before I can use it all up. I have kale seeds so I'm going to try growing it in my new veggie garden this year.

  3. Mary Cate, have you ordered groceries to be delivered? I don't know how you've done it if you haven't! I haven't been to the grocery since the end of February or early March. But I have ordered for curbside pickup once and then delivery after that. My husband has made two or three short trips also.

    I've discovered bags of different grains that are already cooked. You can heat them in the microwave in the bag. One is called Seven Grain (or something like that). I've really enjoyed those with canned pinto beans in a pinch. There's nothing like eating out of the pantry for a simple meal!

    1. I haven't done delivery, Missy. I almost did once, but then I cancelled it after reading some bad reviews.

      When I started hearing the news from China, I started buying a little extra each time, so 2 bags of rice instead of one or 3 cans of tuna instead of one. Honestly, I figured I had enough to last a month or so comfortably. I never expected I'd have to last this long. Meals aren't particularly interesting, but they're nutritious.

      My one splurge was I ordered 3 coffee cakes from a bakery online. I sliced them and put them in the freezer so I'd have something to look forward to each day. I also had a lot of chocolate the kids had given me for Christmas. :)
