Kale - the new Romaine

Facebook and Twitter have been full of so many funny memes this past week.

My favorite may be this:



Unfortunately, it's not really funny. From what I'm reading, this last round of recalls was the straw that broke the camel's back for many people. As much as they love salads, they're just not willing to risk getting a serious life-threatening illness.

So, I'm here to tell you, you don't have to forgo salad. Just try a different base.

I've been preaching the benefits of kale for years, but for those I haven't convinced yet, consider this. If you buy a bag of kale like Glory, you can blanch it and then use it as a base for a salad. It won't have quite the fresh crunch of Romaine, but it won't have e coli either.




I thought I'd share photos of a few of the kale salads I've shared over the years.







You can really just add any of the things you would normally add to your salad!

So, have you given up on salad? Want to give Kale a try?

Or will you just stick with cake?

  1. You convinced me to try kale and now I love it! I love it with bacon, I love it with fruit, I love it in soup. A poem about kale 🤣 I actually brought some with me on an unexpected trip home to my family so there was less chance of going yo waste. Here is the kicker though! I'm the only one in my family who will eat it! So it sits all alone in a cooler bag waiting to be loved. Hopefully it's still good!

  2. From one kale lover to another! I've said this before - that this time of year it's very difficult to find fresh greens that haven't suffered in the trip to the Black Hills. That extra day on the road in our deep freeze temperatures ruins so many salad greens. :-( But kale is one veggie that can take the cold!

  3. Still haven't used kale a lot in my own diet but my daughter throws it in everything -- stir fry, stew, soup, even scrambled tofu and I love it. Don't ask me why I never buy it for myself.

    I love salads though and used to cover the contaminated lettuce issue by buying hydroponic grown lettuce but then my grocery store starting selling them in bulk and I'd never go through it all before the lettuce went bad. I hate throwing out produce. So now I create my salad (I'm a salad every day kind of gal) on a bed of grated carrots or diced mushrooms. I don't miss the lettuce but I intend to grow my own in the new garden bed I created this summer.
