I have a feeling I've shared something like this before. I tend to throw together strange things to make soup. So forgive me if I'm repeating myself. But this just turned out so delicious I wanted to share!
One evening, I decided I wanted vegetable soup to have on hand as a healthy snack. Of course, like usual, I made the decision spur of the moment, without going to the grocery or preparing. I just started digging--in the refrigerator, freezer and pantry.
I first sautéed some onions and green peppers in olive oil. Then I tossed in a little chopped garlic. Then I started adding anything I could find.
Fresh zucchini
Mushrooms (fresh but past their peak and a bit wrinkled)
A can of Mexi-Corn
Canned fire roasted tomatoes
A bag of frozen vegetable soup mix (from Publix) that included okra, limas, carrots, peas, green beans, and cubed potatoes, celery, and onion (and even had some freezer burn!)
A carton of vegetable stock
Canned pinto beans (drained) for some protein
Season well. I added salt and pepper. I also added dried thyme and oregano. I even added some dried curry! I think that's the ingredient that added such good flavor and warmth.
I let this simmer for a while. When I went to taste it, I thought it was so delicious I decided to serve it for dinner. Besides, I had just been working on it for a good while and didn't want to cook another meal! LOL Instead of making the shrimp dish I had planned, I just added the shrimp to the soup at the last minute.
It was so good! I highly recommend making your own version of this and adding some shrimp or maybe some shredded leftover chicken (or even rotisserie chicken).

Missy, some of the best meals are often those we just throw together. I can't quite wrap my brain around soup yet, though. Of course, soup weather for me is anytime we drop below 80. I'm still holding out for that, but I'm hopeful. I still can't believe it's October. Come on cold weather.
ReplyDeleteMindy, I usually can't either. But I had just started Weight Watchers and was so hungry! I wanted an easy way to fill up with vegetables. I was surprised how much I enjoyed it, because it was still so hot outside.
ReplyDeleteOh we will share our South Dakota cold! We have been getting down to the 30s at night and some days in the 40s during the day this week!
DeleteKatie, we just dropped below 70 at night! It's still been near 90 in the day some days. I think fall forgot to arrive. :)
DeleteWe've been up near 90 too. Last night was cool, but the humidity was 96 so it felt awful!
DeleteI love making meals like this! We call it "what ever is in the kitchen" meals. A soup with shrimp sounds amazing! The other night I made home made chicken stock in my instant pot (so much faster!) I had some frozen chicken I needed to use up and my husband isn't a fan of bone in chicken so it was a great way for me to get all I could. So I took the meat off the bone after it was cooked and the next day made chicken soup! First home made soup of the season and now we will eat it for a whole week. Or should I say my husband will because I am out of town for the weekend! Lol Soups like this make it easy to use what you have. :)

DeleteI love making soups like this, too. Leftovers, clear out the freezer, finish up the garden...any of those make great soups.
ReplyDeleteMy favorite is leftover hamburgers crumbled up, a potato or two, tomato sauce, green beans, and onions. Add in some herbs and I have a husband-pleasing combo. :-)
