Revisiting St. Patty's Day Cake (aka Easy Pistachio Cake)

Well, St. Patrick's Day is nearly upon us, so I thought we'd revisit a recipe that celebrates the wearin' of the green. My mom used to make this cake all the time when I was a young girl, especially for potlucks. It's so moist, it doesn't need frosting and is SO delicious everyone will want the recipe. It'll even make believers out of those who fear green foods. Best of all, it's easy.

So here's what you're going to need:
1 package yellow cake mix (I prefer Duncan Hines)
1 small package pistachio pudding mix
4 eggs
1 cup water
1/2 cup canola/vegetable oil
1/2 tsp. almond extract
Green food coloring
Preheat oven to 350 degrees.

Pour everything into a large mixing bowl.
Mix on low to combine.
Scrape down sides, then beat at medium speed for 2 minutes.

Add 6-8 drops of green food coloring, if desired, and mix into batter.
Grease and flour a Bundt or tube pan, or spray with baking spray (love this stuff!).
Now pour in your batter.
Doesn't that look pretty? So spring like.

Bake for 40-50 minutes, until toothpick inserted half-way between outer edge and center cone comes out clean.
Cool in pan for 10 minutes, then invert onto cooling rack.
Once cake has cooled completely, sprinkle with powdered sugar. 
You could add a glaze instead of the powdered sugar, if you like, but we've always done it with just the powdered sugar. 
This cake is moist and delicious. And green! Perfect for St. Patty's Day.

Well, it looks like winter is behind us here at the ranch. While people in other parts of the country were shoveling snow this past weekend, I had to mow the lawn.
Despite last week's freeze, things are growing greener by the day. And with a couple of gorgeaous afternoons behind us, I'm finally ready to embrace spring, even though summer won't be far behind.

  1. Oh -- yumm -- I'm all for cake any time of year but it's a given when it comes to St. Patrick's Day. This one looks scrumptious!

    Not many signs of spring here yet -- still buried in snow and more snow in the forecast but the weatherman promises it will reach 11 on Thursday -- that's 51 to y'all at the cafe. But it's also going to rain so we're bracing for floods. And then it's plummeting back down to zero the next day. :-( So that means skating rink country again. I think I'll stay in and eat cake until the real spring shows up. Bwahahahaha!

    1. Kav, I think staying inside and eating cake sounds like a wonderful plan. It is going to be I-CY. I will be thinking of you and your garden as we work on flower beds this week.

  2. What is that on the ground at your place? It's green... Hmm. Haven't seen green on the ground for months!

    We're expecting a major winter storm tomorrow through the end of the week (the one that's in the southwest today,) so I doubt if we'll see green grass in the near future. But when it comes, it will be delightful. Meanwhile, we're supposed to reach 50° today! And yes, we'll be enjoying it!

    I'm making dessert for our small group tomorrow night. I think I'll make this cake to celebrate spring!

    1. Jan, we've been on the road all day, returning from our daughter's, and heard them mention a major snow storm in Wyoming and immediately thought of you. And why is it that the temps always seem to ratchet up right before the bottom drops out?

  4. Hmmmm, Talenti makes a pistachio gelato that I'll bet would go really well with this! Just call me a trouble maker.

    I used to binge on pistachios, but then I got a migraine from them. :(
