Chicken Soup, the Cure for the Winter Blahs

Are you snowed under, iced under, or simply dealing gray skies? Have you got the sniffles, a nasty cold or the flu? Then have I got the recipe for you.
This chicken soup recipe came from my SIL. It's fairly easy and the actual cooking time isn't long. However, there is some prep work, so plan on about an hour and half  from the time you start chopping until the time you're sitting down to eat.

Here's what you'll need:
  • 4-5 boneless, skinless chicken breasts, diced
  • 2-3 tablespoons olive oil
  • 5-6 large cloves of garlic, minced
  • 1 medium onion, chopped
  • 1 lb. carrots, peeled and sliced
  • 4-5 stalks celery, sliced
  • 2 quarts chicken broth
  • 1 quart vegetable broth (or use 3 chicken)
  • 2-3 teaspoons Worcestershire sauce
  • 1 teaspoon ground black pepper
  • 1 teaspoon thyme
  • 1 teaspoon poultry seasoning
  • 1-2 dashes red pepper flakes
  • l large bay leaf (optional)
  • 3-4 cubes (or equivalent) chicken bouillon
  • 1 package Kluski or Bohemian noodles
I like to chop and gather everything for this dish before I actually start cooking.
Once that's done, place a large Dutch oven over high heat and add your olive oil. 
When the oil is heated, add the chicken, onions and garlic.
Cook until the meat is browned.
Okay, so it doesn't exactly brown because there's a lot of moisture in there from the onions. The main thing is that you don't want to see any pink meat.

Next, add your carrots, celery, broth and all of your seasonings.
Stir and bring to a low boil. Reduce heat and simmer for 30-45 minutes or until veggies are tender.

Boy, oh boy, does the house smell yummy. Talk about whetting your appetite.

Add noodles and simmer for an additional 20-30 minutes.
This is one lean meal with loads of flavor. It'll also warm you up and help clear those sinuses. But what a delicious way to do it.

Here on the coastal plains of Texas, we've been dreary all week. Cool, drizzly--or as my husband says, cold and wet. But while the skies may be gray, it sure makes for some good writing weather. Not to mention great soup weather.

  1. This recipe is perfect for supper tonight, Mindy! Both hubby and I have felt...well, not sick...but not right, either. Like there's a cold hanging out there, just waiting to attack.

    But even if I didn't feel a need for chicken soup, I'd be making this one anyway. I looks delicious!

    I hope your gray days turn to sunshine soon. We're still in the midst of cold temperatures, but we're supposed to get a bit of a warm up today and tomorrow with sunny skies.

    I can take almost anything when the sun is shining!

    1. Jan, the best part about this recipe is that it's not a ho-hum chicken soup. Instead, it's bursting with flavor and that makes it super satisfying.

      Believe it or not, the sun has peaked out today. It's surprising how green things are looking out there. I mean, we're not even halfway through February. Crazy.

  2. I love soup or stew on a blah winter day. Something so comforting -- especially if it's served with some tasty fresh bread. :-) I'm making lentil soup tonight...I guess the lentils are my version of your comfort chicken. Don't know if they hold the same magical healing properties in a soup though. :-)

    We are bracing for even more snow...like the worst blizzard to hit us yet. Starting this afternoon and going on for way too long. A foot and a half if the predictions are right -- add that to the almost 8 feet we got in January and, well...I think we're still going to have snow in April this year! I'm rushing out to the grocery store now before it hits because who knows when I'll get out again?!

    1. Kav, I forget, which state/province do you live in? Eight feet is a lot of snow. I hope it didn't all fall at once. Still, like you said, it'll take forever to melt.

      Yes, do you stock up run to the grocery today, then hunker down where it's warm and you can eat all the comforting lentil soup you like.

  5. I can well imagine how this smelled because I made chicken soup this weekend. I love the thicker noodles/

    We had nasty snow/rain here today. It would have been a good day to stay home with soup.

  6. I love chicken soup. It's a favorite, and to have homemade chicken soup with Missy's Sister Shubert rolls, I could live on that forever. It's like the perfect coupling of comfort "Make Ruthy Happy Food". I'm so glad we have Sister Shubert rolls here now!

  7. Cate, we got a wintry mix, too, a little heavy on the snow/sleet side, with just enough freezing rain in between that everything crunches when you walk on it and you sink in.... There's about 3 inches of snow atop the ice atop ground because we had a couple of melting days....

    And then today snow squalls off the lake but not like they're getting in the PNW.... They're having a winter to remember!
