Taste???? AMAZING!!!!!
I don't always have time to cook out on the grill. The common scenario is I fire up the grill, throw food on, it catches fire, we save what we can and have supper.
TWO INGREDIENTS BESIDES THE SQUASH!!!!! (Salt and pepper do not count as ingredients in Ruthy-world... so add them as needed!)
But for those times we actually want to eat, here's a great in-the-kitchen recipe that's to die for. Of course eggplant or zucchini could be substituted for the summer squash, and if you like tomato, a couple of quartered tomatoes can be thrown into the mix...
But for this one, it was squash and squash alone!
Cut the ends of two or three summer squash. Cut squash into pieces about 1/2 inch thick. If the wide end is too wide, cut pieces into quarters.
In large frying pan, pour a small splash of olive oil. Heat over medium/high temp/flame until oil is hot. Add summer squash. It should sizzle right away.
Sprinkle generously with a roasted garlic/herb seasoning mix or a black pepper blend seasoning mix or any seasoning mix you LOVE!
Stir around with spatula.... Let squash sizzle, then toss with spatula again. Don't overcook squash, it will get mushy. When squash is losing it's white look, layer top with a cup to a cup-and-a-half of 4-blend cheese or sharp cheese...
Turn off heat, cover and let cheese melt.
DELICIOSA!!!!
We've made this every day for the grown-ups working here.... And it's become a kid fave, too!
It just melts in your mouth, bursting with flavor and almost NO CARBS.... They say there are about 7 carbs in a whole squash, and there's one in the cheese... So 8 carbs of absolute deliciousness!

Tina, I am chocolate.... but I'm trying to be good!!!! And fresh veggies are just a gift from God and Mother Nature combined! The phone.... Okay, let me look, it's a Samsung something or other because I'm using Straight Talk now, $45/month and no extra charges. I love that part....

ReplyDeleteYum to this recipe. Looks divine and so easy. I'd love throwing in a couple of juicy tomatoes in the mix. And like that I can easily adjust the recipe for one. So glad you are on a summer reading kick at your house!!!!! And that tree house is awesome. A great place to read too.

Oh -- and speaking of reading -- finished His Montana Sweetheart on the weekend. I did a back to back Ruthy/Jan reading fest. Awesome book, Ruthy. You do cowboy very well. And had to chuckle at how you fit baseball into the mix.

DeleteAnd the baseball thing wasn't even me, it was part of the continuity and how perfect was that??? That I got the book to do that had the Old Timers Baseball game.... One of my favorite things at Yankee Stadium is Old-Timers Day in July, and I have every intention of going next year. It's such a cool thing, to gather where so many baseball greats have put on their cleats... lifted their bats... prayed to God.... I love it! Of course NYC food and Starbucks don't hurt my appreciation for a trip to the city, LOL!
I saute zucchini this way, but for squash I still go back to my southern roots. I fry up a few strips of bacon and then cook the squash in the drippings with onion. when it's done I crinkle up the bacon on top. (I know olive oil is a healther oil, but bacon is low carb too, right :) I'm loving all the fresh veggies this time of year! we have tomatoes everywhere, giving them to neighbors, family, friends at church and still can use them all. May have to put some up in the freezer for winter soups.

What a great idea, and I think just adding crumbled bacon... Oh, and what about the tomato, too, then it's like a BLT Squash stir-fry with almost no carbs!!!! SUHWEEEET!
Wright's Applewood bacon is so good, would be delicious with this. Hadn't thought of adding the tomatoes, hubby would love a new way to use our produce.
