Cookie Crust for Lemon Pie

What do you do with a tub of snickerdoodles that was left open while you were in New York City (with a blizzard, by the way) for four days...

The blizzard was only ONE day. The cookies, left in the hands of mere mortal man, were left open for the duration. So of course they're rock hard, but who wants to waste all that cookie goodness?

Not me!

Cookie crust....

I blended all of them in my Cuisinart food processor until they were fine crumbs.... and by the way, my Cuisinart was part of the mega blade recall months ago, and no new blade has arrived here as yet, so yes... I used DEATH BLADE.

Back to cookies:

4 cups cookie crumbs
2 Tablespoons Lemon Extract
1/4 cup sugar
1/2 cup melted butter

Combine all, press into 9 or 10" pie pan, bake at 350 for about 10 minutes.

Now the filling: I was using the Betty Crocker recipe and adjusted it for my bigger pie pan... but it came out too sweet, so I'm adjusting it here.

Mix together in 3 quart saucepan:
1 1/4 cup sugar
1/2 cup corn starch

Add in:

1 1/2 cups water
1/3 cup lemon juice
Heat to boiling, stirring constantly.

Mix 2/3 cup of sugar mix with beaten egg yolks, beating as you mix... then combine
3 large egg yolks (put in small ball and whisk lightly.... )

Add in:
1/3 cup lemon juice (again)
3 tablespoons butter

Return to heat, boil and stir for one minute.

Pour into baked pie shell. Pile meringue on top and bake at 400° until top is golden brown.

3 large egg whites
1/3 cup sugar
1 tsp. vanilla

Beat egg whites until foamy, add sugar and beat until firm peaks form... spread over hot lemon filling and bake until golden brown on top.


There is nothing like lemon meringue pie.... it's got that amazingly delicious springlike entity of lemony goodness!

So life here has been filled with normal family crazy, a few bugs as a salute to the end of winter, and a hope for spring when we notice the days are starting to stretch l-o-n-g-e-r.... YAY!!!!!

  1. Is this a "when life gives you lemons, make lemon meringue pie" post?

    Snickerdoodle crust would have a hint of cinnamon, wouldn't it? I'm sure that added an extra special flavor texture to the pie.

    We're feeling like spring around here today. High temps might even reach 70°! That's what we get here occasionally...south winds bring balmy air and the sun gets a chance to do its business, and we have a spring day in the middle of January!

    Of course the snow will be back in another week or so, but I love the promise the warm weather gives us. :)

    1. We're heading for 50 this weekend, so we've got a respite... but that kind of just means mud. Mud is so stinkin' messy! But there's no getting around it, and I'm so lucky to have a washing machine. Can you imagine mucking all this stuff out on a washboard? We are blessed!!! Enjoy your mild days, my friend!

  2. Beautiful!! I'm amazed. I really do need to try this someday. I don't remember ever making a meringue in recent decades. Time to do it again!

    And you used bottled lemon juice! I don't feel so bad about myself now. :)

    1. I always use bottled lemon juice. No one would ever know the difference, and it's strong so the lemon flavor shouts out at us.... And Missy, isn't it pretty???? Pretty enough to eat!

    1. Hahahahahah! They sent this SCARY note about what to do and that they'd send a blade right out... In early December. Well, that's over two months ago, and who doesn't use their equipment over two months?

    1. Cate, now I'm psyched. My blade is on the way!!!! Maybe. So okay, killer blade might be retired soon, but for years I used it not knowing it was Killer Blade... and with great ease I might add.... Now I'm like PANIC WOMAN every time I set the thing on the counter, like the blade is out to get me. STOP, BLADE!!!! Don't make me crush those crackers by hand!!!! :)

  5. This looks AMAZING. I think I need to make this on the weekend. Of course, I don't have stale cookies around, ever, but I'm sure I can find some cookies to use.

    1. I usually use regular pie crust, but those cookies were just cryin', callin' my name!!!!

  6. Excellent way not to waste anything. Lemon meringue pie is my favorite pie and with a snickerdoodles crust--yum oh yum. Thank you for sharing. Enjoy the warmer temperatures. We are experiencing spring like temperatures only to have an artic blast next weekend. Flowers popping up will be so confused.
