Life is nothing if not unpredictable.
So my Mom's been in the hospital since Thursday night and we finally moved her to rehab yesterday. Just to keep things interesting, though, my middle daughter calls me while we're at the ER Thursday to tell me that she's getting married--THE NEXT DAY!
What?
Justice of the peace. No guests. Meaning this mom didn't have to do anything.
Yeah, right. Like that's going to happen. So Easter was a dual celebration. Our risen savior and the newlyweds.
Between hospital visits, I somehow managed a decent spread of ham, Mac and cheese (recipe here), corn on the cob and the obligatory deviled eggs. Apparently I was in the mood for yellow foods.

But no meal is complete without something sweet, so we had a pot pourri of Easter/wedding cupcakes--white cake with buttercream or chocolate frosting or devil's food cake with buttercream or chocolate.
Yum!
What a week. Now I just want to stay home, shut myself in my office with a nice pot of tea and write. If only life had a pause button.
Wow! Congrats to the newlyweds! I've heard a lot of people choose that when they don't want the hassle or expense of a real wedding. The cupcakes look delicious and I'm sure they'll be very happy! (The newlyweds, not the cupcakes, I mean.)

Thank you, Missy. But you know how it is. You just take things as they come. God gives us the strength we need when we need it. Cooking and baking are simply therapy.
DeleteWe still have some unanswered questions on another medical issue with Mom and, unfortunately, this episode has set us back on doing more tests. Hoping we'll be able to address those soon.
I'm happy just LOOKING at the cupcakes!!! Mindy, aren't kids a hoot? Congratulations to the newlyweds, and I can totally understand avoiding the crazy that's taken over weddings... Simple and sweet is my cup of tea and you did that masterfully, Mama!!! Good for you!

DeleteWell, kudos for you for rolling with the punches. Talk about rising the occasion! From one family crisis to another. And I agree with everyone else, those cupcakes look divine. I can never make them look pretty. My frosting just looks smeared on. LOL I hope you get the quiet week you crave.
ReplyDeleteKav, the way I see it is we either roll with the punches or get knocked down by them. No one likes to be knocked down. Besides, getting back up can be tough. :)
DeleteAll you need to make cupcakes look pretty is a pastry bag and a large star tip. Swirl it on the cupcake and voila! Easy peasy.

ReplyDeleteI'm not sure what I'd do if my daughter announced she was getting married like that. Of course, it would help if she was dating someone.....
But you pulled off a great looking celebration. And aren't you glad you don't have the stress (good stress, but still...) of planning a wedding while you're going through these ups and downs with your mom's health?

LOL! Jan, knowing that they were planning to get married anyway definitely helped keep me on an even keel. Had that not been the case, I'm sure I wouldn't have handled it so well.

Congrats, prayers and everything else. I may or may not mention this to my daughter. But it balances out all those folks who spend millions and then get divorced a month later!
