Shepherd's Pie Twice Baked Potatoes: a Taste of Ireland

I've spent most of the past three weeks in the hospital with my husband, so not much cooking got done. But when I can cook again, I totally intend to make this recipe.

So, I'm cheating by just posting a link, but I hope you'll forgive me because it looks that good.

It's from the Food Network, and it's hard to go wrong with their recipes.

To make up for the copied recipe, here are some lovely photos of Ireland to appreciate her beauty in anticipation of St. Patrick's Day. It's been over 30 years since I was there, but it still feels like home.

  1. Mary Cate, I love these pix of Ireland. I would love to visit there someday. So green and pastoral. But Shepherd’s Pie is as close as I’ll get for a while. Yum!

    Those Shepherd's Pie potatoes look fabulous! I think you'd have to use those big baking potatoes rather than the medium sized Russets I usually buy. I'm going to have to try these - maybe for St. Patrick's Day!

  3. That's a neat way to make shepherd's pie -- and great for single servings too. I have a recipe for shepherd pie that uses lentils instead of meat so I might just give that a try.
