Easy Apple Cake

I had leftover apple pie filling from our post-Christmas crepes... and I can't let that deliciousness go to waste, can I?



No!

So I found a dump-style cake recipe online and played...

1 box white cake mix
2 1/2 cups apple pie filling (that's what I had left...) OR: use a large can of apple pie filling...
3 large eggs

Mix together. Spread into 13 X 9" greased and floured pan. Spread with streusel topping:

3/4 cup brown sugar
1/2 cup flour
3/4 cup chopped walnuts
3 TBSP. butter, softened
1 tsp. cinnamon

Blend all together. Sprinkle on top of cake mix in pan. Bake at 350 degrees for about 40 minutes, until center is lightly firm and a toothpick comes out with  just moist crumbs.



Drizzle with cinnamon glaze below:

1 cup powdered sugar
2 Tbsp. soft butter
1/2 tsp. vanilla
1/4 tsp. cinnamon

Mix together. Add milk and mix to desired consistency.


I like to drizzle this onto the cake, so I added two splashes of milk... maybe two tablespoons? I didn't measure, I went by sight... and then drizzled the top of the cake with the cinnamon glaze.

So good!


We're having this for an after-school snack so I'll let youse know what the kids think. They might object to the nuts.... but I won't! :)

And we're closing in on the time of "normal" here in upstate.... Winter, short days, long nights, a perfect time for writing books and rocking babies...

Or reading stories and doing homework with teens!

For the next few months, that's our normal.... and I have to confess: I love it. :)

    Enjoy the winter "normal" with writing books and rocking babies. We are hearing a good chance of icy conditions this weekend. I'll take the snow over the ice. It was 60 degrees last night traveling home.

    1. Marilyn, yes, snow is better! There's so much damage with ice storms.... where as snow is a temporary inconvenience.

      And you would love this cake. It is soooo good! And honestly easy!!!!

  2. Your new normal sounds divine...as does this recipe. Kind of a cake kind of a crumble. There is something so comforting about warm apple anything in the winter. I even add a dollop of homemade applesauce in my oatmeal and then dust it with cinnamon. Decadent comfort food.

    1. Kav, you're right, it's got a crumble look, but definitely a more tender cake-like taste from the cake mix. They give a more refined "crumb" to the cake, and I love it... I'm thinking of selling these next year at the produce stand... It's really that good! Folks would love it!

    Can you just go out and buy this cake? Making it takes a lot of supplies and seems like a lot of work if you don't ordinarily cook. And don't have the supplies on hand.

    Is it just called "Apple Cake" or did you just invent this thing? Is it in stores?

    I love almost anything apple.
