Our walnut tree is producing giant walnuts this year. Hooray!
So, a friend made these and I told her I had to have the recipe! She told me it was basically a chocolate chip cookie recipe with an added 1/2 cup of cocoa and substituted mint chips. But for those of you who don't have the regular chocolate chip recipe memorized like I do, here it is:
2 cups flour
1/2 cup cocoa
1 tsp baking soda
1 cup butter
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
1 tsp vanilla
2 cups chocolate chips
Preheat the oven to 350F before starting. And of course, we separated our dough because there those among us who do not love mint *raises hand* I like mint in theory. I love the look of grasshopper pie and that pale green of mint flavored items. But mint always makes me feeling like I'm brushing my teeth. Real mint is different (mint in iced tea, for example). Anway, for the plain batch, I added a teensy tiny bit of orange flavoring because chocolate and orange are perfect together!
On the pan...
Close up. Say "going to be delicious"!!
Out of the oven!
Stacking on a plate for presentation.
So, have a warm out of the oven cookie and stay a while. :)
Don't forget to drop by my author page Mary Jane Hathaway or Virginia Carmichael, where I post all my books and a lot of stuff that's not news but is pretty or amuses me. Also, my blog, The Things That Last, which I try to update every few months or so. Ha!
Happy Friday, everybody! If you're a writer, I wish you lots of words and sales. If you're a reader, I wish you oodles of good books. Until next time!
I love chocolate and mint anything... one of my faves is Perry's Mint Chocolate Chip ice cream which is actually toffee-flavored bits in mint ice cream, so totally different from traditional blends.... It was called "Swiss Chip" for a while, now they call it Mint-Ting-a-Ling... but it doesn't matter what it's called, it's a Ruthy fave!!!
ReplyDeleteI would love these, Mary Jane! And I bet the tribe here would, too! Thanks for sharing it, and I might just whip up a weekend batch of cookies!!!
You know, every Christmas I start hankering for mint something! Like mint hot chocolate, mint cake, etc. And then it fades away and I don't really think about it anymore!
DeleteWe also made a chocolate butterscotch version. Talk about easy!
Yummy! I love chocolate and mint as well. And a neat trick to just add cocoa to the choc chip recipe. I've never seen mint chips though. Must see if I can hunt them down. But you know what would be a great alternative? White chocolate chips. Those we have. :-)
ReplyDeleteMMMMM. I once had blonde cookies with macadamia nuts and white chocolate. SO GOOD.
DeleteAnd I found these at our local outlet grocery store. not sure if you have those there but we go every season, usually around Halloween to see what they have. And they had Ghirardelli chips on sale in every variety!
I'm with you on the mint tasting too much like toothpaste. hahaha But these are so pretty! I love the green chips. :) I bet they'd be good with M&M's in them.
ReplyDeleteIsn't it pretty?? And I made a butterscotch version and it was delicious!
