Suppertime! with Tina Radcliffe

Yes, it’s true. I like my meals cheap and easy. But I don’t skip on the delicious factor.

Today’s menu:
Salmon
Rice Medley
Side salad
Cheddar-Bay biscuits

If you’ve always been afraid of cooking salmon, check out this tutorial courtesy of Serious Eats. I use a nonstick pan, a meat thermometer and a little olive oil. Additionally, I use McCormick Grill Mates Salmon Seasoning, and sprinkle on both sides. BTW, it’s only available online now. Go in with a buddy and buy the two-pack.

  



Next add the side dishes of your choice.

I like a nice personal salad with romaine, garbanzo beans, feta cheese, dried cranberries and a few croutons. Dressing of choice as well.



Plus a fast serving of Minute Rice Multi-Grain Medley: Brown rice, wheat, quinoa, rye, oats and barley. Cooks in 60 seconds-or a color match for the salmon is a baked sweet potato.



The real treat to this meal is Red Lobster-Cheddar Bay Biscuits. I picked up the mix at Wal-Mart. All you need to have on hand is ½ cup grated sharp cheddar and 1/3 cup of butter.

  1. I've gotta to to wally world and get those biscuits! why don't they just sell them already made in the frozen section?! I've never liked salmon but this looks good- will have to try that seasoning...
    will I be lost reading this book if I haven't read the others first?

  2. The biscuits are amazing and addictive. I don't think they'd survive freezing. This is only book two of the series. But they are all stand alones, meaning you do not have to read in order or read them all to understand what is going on.

  3. These biscuits look amazing, but I guess I'd be doing the dishes as I'd probably eat them all myself! When we had the 3 kids at home, everyone rotated a dish duty night. My middle daughter still wants to know why everytime it was her turn it was "red" night, spagetti, chili, etc. lol
    I like all your shortcut cooking too. I am at the point in my life I just don't want to spend as much time in the kitchen as I did when I was raising my family. Having a husband who enjoys weekend experimenting is a wonderful thing!

  7. Tina, this meal has so many of my favorite things. I'd do well with just the salmon and cheddar biscuits. Oh, my! Just the thought of those biscuits has my waistline expanding. I shoulda stopped at the salmon.

  9. Tina, those biscuits are our favorite! They have them at Sam's too. A BIG box of them! And I'm loving the salmon tip. Mine is always too plain tasting.

    Oh, please I thank God for the dishwasher every day, but there's a big share that are still my department. Dave could literally SMOTHER in dishes and not see a countertop and be fine with it. His brother is very neat and tidy. Oh my stars, I could use a splash of Dan's neatness around here! BUT.... we do have that rule about making the bed because I hate unmade beds. All those years, all those kids, and I focused on the important stuff... but now? I want beds made.

    Who'da thought Ruthy would care????

  11. Supper? I'm thinking lunch! (of course, it's mid-morning here right now....)

    I have to get some of that salmon seasoning. I usually season mine with salt, pepper and garlic, but I'm up for a change.

    We're heading east this weekend for our semi-annual trip to visit parents, and I'm taking you with me, Tina - in the form of Stranded With the Rancher AND the Rosetti Curse :) Hubby will just have to talk to himself in the car.
