Frozen Peach Cheesecake

EASY PEASY!!!!! If you start with a cookie crust, you're half-way there. This is a variation on the triple berry cheesecake I made a few weeks back HERE.....

But I had frozen pie crust and I was making a banana cream pie and peaches are just coming into season and we were roasting a turkey (outside, this was the one warm day we've had in a while!!!!)..... 




And I wanted peachy, creamy goodness but didn't have enough peaches to make a pie:




BRAINSTORM!!!!!!

I had sour cream and cream cheese (Can you say "staples"??????) :) So I baked the pie crust (but cookie crusts are wonderful for this quick cheesecake!) And then I did this:

FRUIT FILLING:


4 ripe peaches  
2/3 cup water
3/4 cup sugar
2 Tablespoons cornstarch 

 Peel and chop four peaches. Put into small saucepan. Add water. Simmer until peaches are just beginning to soften. Mix sugar and cornstarch together in bowl, add to peaches, stir over medium low heat (just a couple of minutes, I promise!) until thickened. Cool in fridge while you make the cheesey-goodness-filling.





2 8 oz. packages cream cheese
8 oz. sour cream
1 cup powdered sugar

Soften cream cheese. Add sour cream. Soften again if lumpy. (The chilled sour cream decreases the cream cheese temperature, so I put it in the microwave for a minute on the defrost setting.) Add powdered sugar (sift if lumpy) and beat until smooth.

Spread 1/2 cheese mixture into cooled pie shell. 


Top with most of the peach filling. (I scorched the bottom of the pan and with VERY CAREFUL SPOONAGE I was able to rescue about 3/4 of the filling and no burned taste. The trick is "Don't Stir The Bottom!!!!")

Add second half of cheese filling over the peach pie filling and then dot that with the last little bitty smidgen of peachy amazing goodness.... Swirl that in, freeze. Thaw for about 15 minutes before serving.


I used heavy whipping cream to make homemade whipped cream, but even with aerosol whipped cream, this would be delicious! Creamy/peachy/frosty.... All the elements of summer!

He's such a little charmer! That frank smile, totally disarming and how cute are those chubby hands?????

And then Ayden had to get into the act by being SUPER CUTE BABY IN WALKER so I had to put him on the blog, too!!!

Note he's got the Elvis lip going while singing "Heartbreak Hotel".... :)  Isn't he adorable?????

And we celebrated Casey (my mother's helper) birthday yesterday...


And here she is, snuggling Ayden last week! I've had Casey with me for thirteen years... she wasn't even two years old when she first came here for daycare and she called me Nana and we butted heads regularly and she is one of the loves of my life.... What a marvelous young lady!

  1. Mmmm! Now I'm craving peaches!

    Do you have any tips for a sugar-free, Splenda version of this? Especially how the cream cheese part might turn out with Splenda instead of powdered sugar?

    1. Natalie, I have to go to the experts for that! Powdered sugar softens cream cheese which is why this works better frozen.... but I don't know if Splenda does the same thing. Anybody know this?

The fun thing is because it's frozen, you have to CONTEMPLATE eating it, which gives us time to reconsider our choices and put it back in the freezer!!!! :) It really has a great summery taste with the fresh peach pie filling swirled in. And with a store-bought cookie crust, it's a ten-minute pie. Love it!!!!

    1. LOL, Susanna! It does in this one! I make big batches of pie crust and then freeze the pieces I need for pies. I wrap them in plastic wrap and then I toss them into big, gallon freezer bags. When I need one, I just take it out and let it thaw. Easy-peasy and always handy! Oh, I love pie so much!!!

  4. I love peaches and this sounds great, but I may just try it with pears. Our tree is going nuts this year and we've gotten hundreds! Pearsauce, pear jam, pears for mixing in cakes and brownies in place of oil, you get the picture! Going to try it with a gram cracker crust to mimic a cheesecake.

    1. I love chopped pear filling! Yes, that would work great and pearsauce is even better than a lot of applesauces. You go, girl! And in case you didn't see it on facebook, thank you for the lovely card! What a surprise.... especially since I found it in a pile of things when I was cleaning, so I just opened it!!!!     1. Mindy, I love you back! :) I love doing this stuff together! And these contracts have given me opportunities to do things that wouldn't have been possible a few years ago. Remember when Jerry Lewis used to talk about "giving" as selfish, because it made you feel so good? I agree!!!!!!

    1. MISSY! :) Another way we're alike, LOL! No scraping bottoms. We should start a club. I bet this would be a big hit in the southern states where peaches reign supreme. And I love fresh, sweet peaches. Amazing.
