That moment when... Deadline edition. Easy pizza crescent rolls kids can make!

Helllooooo, Yankee Belle Cafe! The Fresh Pioneer is back and I've got a quick recipe. I say QUICK because I'm drowning under multiple deadlines AND a writing class with my favorite writer.

I probably wouldn't be struggling so much except there's this problem with the seasons... See all that snow? Besides the kids having a great time, it also means I lose my writing time at the park. I usually could cram in a few hours while they played on the swings and went down the slide. Not now. Now it's all at night or at the library.

  Oh, and there were two major books signings where I gave away a book in exchange for donations to our local homeless shelter.
 See my pretty typewriter? No, I don't actually use it to write, but maybe I should. It could be inspiring.
 The coffee and chocolate basket I brought to encourage people to donate. One lucky donor won a basket at each signing and I didn't even pick at the chocolate!

   I suppose I could throw in the hubby who gets up at 3:45 AM to work hard for his six kids, the homeschooling that MUST NOT STOP, the usual cleaning and mothering, and the fact that this family of eight has no dishwasher. The dishwasher part won't be remedied soon, because we have a tiny kitchen and there's nowhere it will fit, unless we rip out the farmhouse-style porcelain sink, which would destroy the old cabinets, which would then change the new window we had put in last year.

 So, it's like 'If You Give a Mouse a Cookie', deadline style... because all of those things above bring me  to paper plates and easy food.
 Pizza sauce, crescent rolls, string cheese.
 Unroll crescent rolls, add pizza sauce, one half of a stick of string cheese.
 Oh, even better! Kids can make this themselves!  Now we've eliminated dishes, actual cooking, AND the adult who is usually cooking. Deadlines, take that!
 350F for 15-18 minutes. I even put foil on the cookie sheet. NO CLEANUP.
OK, so I put hubby's on an actual plate. He doesn't appreciate paper plates. Not sure he really appreciated the kid-prepared food, either. It certainly wasn't the most healthy thing I've ever plopped on a plate but it was definitely tasty.

But the next day I made tamales! You can check out that recipe here. I think the majority of the comments last year centered around whether to eat the husks. Refrigerated crescent rolls might be more the cafe's style. At least, it is mine right now.

  1. I use a dishwasher but really I think it's a pain loading and unloading plus it misses stuff sometimes and I usually rinse stuff off before I put it in. doesn't make sense I know but I like the high temp to hopefully kill stuff since I'm messy.

  3. It's been down to -4F here and super icy! I went to the store tonight on the way home from the library just to get milk and bread and fruit.

    1. thought you were in sunny California?! I can't imagine anything below 18 - think that's the coldest it's gotten here in Houston - but after 40 I can't tell much difference in frozen and more frozen and most frozenest...
      cooking cranberry bread- the recpe Mary (I think!) shared a couple of years ago..smells good and the first pan was smaller so I overfilled a bit and it made a nice crusty edge around the top that I had to break loose and eat/sample - at first I thought it had burned but forgot I had used the dark raisins because couldn't find the yellow ones (think the yellow ones look better since it has cranberries in it for the dark color). this baking is hard work - the only 'good' thing I used one of my Pyrex bowls- the yellow one! -and tried to pretend I was a great cook but feels like I've done pushups or something..cutting butter sucks :-)

  4. YUM! My kids are going to be making these tomorrow!
    We make these kolache style often, but it never even occurred to me to try these with pizza sauce and string cheese. Brilliant!!!

    1. Well, if you've got it, I'd say maybe pizza dough in the can might be better.

  6. Thank you, Julie! And we're good. All is well. It is a season like many others, and so many blessings with it.
    I'm loving Christmas this year. I think because the littlies are old enough to stay out of the tree!! No baby gates necessary!

    And hubby had tamales. He's a happy man. :D

  7. Virginia, I stock up on the four-packs of crescent rolls when they have them at Sam's Club at holiday time. I love the easy, delicious recipes that are my reality when I use the crescent rolls. And I usually buy the name brand because I've tried the others and they fall short... and of course, one of our faves is the Pioneer Woman's apple dumplings made in crescent triangles. I wonder if layering the crescents on the pan and then layering the other stuff, and then a top layer of crescents might work? Whaddya think, Fresh pioneer????

    I'm in NYC having fun with Dave for our 40th anniversary.... We just got back to the room after Mass at the church next door, a church set in the financial district with 7 Masses/day. And I lit candles for all of us, our words, our work, our books to touch hearts and souls.

    Tonight Lawyer Boy is being recognized as a "Next Generation Leader" by the Human Services Commission for his work to help coordinate efforts to help homeless families.... So I get to DRESS UP!!!! :)

    I'll let you know tomorrow if I manage to get through the evening without embarrasing Zach!!! :)

      7 Masses a day??? This family who is always late could really get into that. Late? We could just wait for the one that starts in 30 minutes, like at the movies! Oh, to live in a place with more than 4 Catholics per mile.

      I love Lawyer Boy. In a way-too-old, I'm-married-so-sorry, you're-my-hero sort of way.

  8. Kudos to you, Virginia, for teaching your children to cook! And the pizza roll up thingies look like the perfect kid friendly food.

    And a salad AND fruit? I'm impressed!

    (And I'm buying one of those 4-packs of crescent rolls at Sams this week.....)

    I'm so glad your book signings went well...but when you add chocolate to the gift basket, it just has to be a popular item, doesn't it? :)

    1. Yes, I think a lot of people were more interested in the basket than helping the Mission! They would take a look, go out and buy something, then come back to put their name in for the basket. The power of free!

    2. P.S. I'm not sold on the crescent rolls. I have sensitive taste buds and they tasted pretty chemical to me. The kids didn't notice anything. I don't think there's a way to make the dough any easier than a refrigerated pack so I'll just stick with it. But it served the purpose, which was to feed the kids!

  9. OH MY GOODNESS!! You had me at melted cheese oozing out. YUMMMMM!!! Thank you for sharing this. I'll will be digging in my cheese drawer to see if I have any more cheese sticks. If not, they're going on my grocery list. Thanks, Virginia!! Hope you make your deadlines!

    1. Deadlines are for people who don't know when to stop. I'm a perpetual tinkerer and I need someone to stay STOP.
      I think the cheese could be anything, but cheddar might get crunchy instead of stretchy like mozzarella.

  10. BTW Virginia. We used to have a portable dishwasher. You rolled it to hook it up to the sink. Then when done, you store it away. Could you fit one of those???

    1. We've thought about those, but we'd have to remove some counters just to have a spot to store it. There's a mudroom attached to the kitchen, and then the laundry room after that, but the dishwashers we've seen are too wide to fit inbetween the washer/dryer or along that narrow space. We thought of switching the fridge to the other wall, moving the doorway, and then hooking up a dishwasher in the old fridge space, but we probably should have done that BEFORE we built on last year! We had men working in our kitchen area for months and figured we could just stuff in a dishwasher after they were done. Nope... everything is built in and the space is just too small for the modern dishwasher.

  12. What an ingenious idea, Virginia. Crescent rolls are a wonderful invention. As is string cheese. Sometimes deadlines call for desperate measures, but not all of them look as delicious as these do. Hang in there.

    And while the weather may be throwing you off kilter, it looks like your kiddos are liking it just fine. :)
