Hello, everybody! The Fresh Pioneer is back! Maybe everyone knows a honey mustard recipe but I've never known how easy this is. I've done the cheater recipes that have a sweet and sour flavor, but never a honey mustard recipe. I tried this back in August, so the veggies are looking pretty delicious right now!
1/2 cup dijon mustard1/2 cup honey
1 tbs lemon juice
salt to taste
(Some add mayo but I wanted a thinner sauce for the chicken, rather than a dip type sauce, so I skipped the mayo.)
Cook the chicken tenders in the oven, covered with foil, until done through. I added a cup of chicken stock to the pan while cooking because I didn't want them to dry out.
Take the chicken from the oven, baste with the honey mustard sauce.
With the garden fresh veggies, it was a perfect summer meal!

Susanna, how true! :) I am just amazed that we heard it... we know they're moving into the area (which is kind of weird, coyotes and bears and probably lions and tigers are NEXT!!!! :) And a cousin saw a mountain lion/cougar type cat going through our woods a few years ago. He was in a tree stand and he stayed VERY QUIET as Mr. Big Cat headed west. They say we don't have them here, and they're probably right, but the number of sightings of big cats says they do pass through to get from eastern mountains to the Southern Tier... Or McDonalds for a twenty pack of nuggets. :)

Yes, Susanna, this was my experiment in trying to streamline! Consider this a novella, not a whole novel. It's like those short romances where you have to FOCUS on the romance and not all the side plots... well, this is post is focused on the food! LOL

DeleteI know, people hear Oregon and think mountains and such... Probably the way you say new York and people think New York City. But it's a big ol' state over here. Lots of different regions!

DeleteI've never had honey mustard anything but I'm wondering what vegetarian recipe I can try this on....maybe marinating tofu in it first before baking? Or grilling? I might have to get adventurous at some point.
ReplyDeleteI do love honey mustard but I think it's an acquired taste since most of my family doesn't care for it.
DeleteI definitely think tofu could handle some of this for a marinade. And the grilling would add another level of flavor.
Sounds quick and tasty... perfect combination! I like honey mustard, but had no idea there was such an easy recipe for it.
ReplyDeleteAs for wildlife, around here we have bears and raccoons that make it onto our back deck, deer that eat my favourite garden plants, and coyotes that keep me awake some nights with their howling. I've seen one bobcat and hope it's the only wild feline I'll ever encounter here, thank you very much. :)
