Pancake Heaven!

Here's an easy-peasy breakfast, lunch, supper or snack that SHOULD NOT BE TRIED BY ANYONE TRYING TO BEHAVE.

WARNING!!!!

THE SURGEON GENERAL HAS DETERMINED THAT EATING THESE DELICIOUS PANCAKES WILL RUIN ANY AND ALL THOUGHTS OF DIETING YOU MAY HAVE EVER ENTERTAINED. BEWARE!!!

Having said THAT, let me just show you a bit of quick kitchen deliciousness that keeps well, can be sliced for 'morsels' or snacks and is ten minutes, tops.

First, buy Bisquick. Every responsible person should have Bisquick in their cupboard because it makes a great "base" for so many things. Paula Deen uses Bisquick in some recipes, and I love me some Paula Deen!!!



Follow the Melt-in-your-mouth pancake recipe on the back of the box. It's amazing. Truly. You will never eat out for pancakes again because that would be just plain silly.


Here's your batter... Don't you love that big ladle???


Heat up your griddle, but not super hot. Just... regular hot. With a little oil on it. Just a smidge and a half.


Ladle the pancake batter onto the griddle. Sprinkle with chocolate and peanut butter chips. Cook until done on bottom side. You probably won't have the usual tiny-bubble-dots you normally get. But that's okay. I made this big one for fun, but you can make normal size cakes, too.
Flip over.



Cook until done on second side. Like you knew that already, didn't you?  But not too quick or hot... Just:  medium. 


Put on plate. Butter generously. Sprinkle with powdered sugar.


And there you have it, a pancake meal or dessert that literally melts in your mouth with tender, cake-y, buttery, chocolatey-peanut-buttery goodness.

So YUM!!!

  1. Now why haven't I ever put chocolate chips in pancakes before?! And what a kick to add the peanut butter chips as well!

    I have a tried and true pancake batter mix from scratch that I use. Started out making my own batter because my daughter has food allergies -- dairy and wheat among other things -- so we improvised. I use spelt flour, soy milk, egg replacer when she's home visiting but otherwise I use the real dairy but still use spelt cause I like the texture and flavour. And then I smother them with heated up strawberries or blueberries. Yum. The berries make it healthy, right? And calorieless?

    I think it's going to be a pancake supper at my house tonight. Thanks for solving my "what shall I make for dinner?" dilemma so early on in the day!

      And the chips make it more like a dessert than a meal, but clearly I'm fine with that, LOL!

  2. No syrup???? And you probably have the good pure maple nearby you!

    Yes, you can do both powdered sugar and maple syrup! I'm living proof!

    1. Missy, I love you! If I'm doing it as a "hand-out" snack, I don't use syrup... If we're serving hot on plates, then, of course! Pure NYS maple syrup, dark amber... The more expensive light amber doesn't have as much flavor and I like the slightly 'darker' flavor of the dark amber syrup.

  3. I was going to say "where is the syrup" but now I am thinking marshmallow fluff would be fantastic on these!!!!!!

    My poor mother.We always insisted we go to IHOP for HER birthday so we could have the chocolate chip pancakes. But I never could figure out how to make them until now!

    Its all in sprinkling, isn't it? Not putting in the batter beforehand.

    2. Yes, the sprinkling is the ticket, absolutely... and our favorite pancake place "Perkins" closed locally. For the second time since I've been a grown up. Seems the local owner couldn't come to terms with the franchise licensee parent company, and in all honesty, they were charging way too much for pancakes and eggs. Kind of crazy. But that makes me think of cottage cheese crepes, so I'm going to do that for tomorrow.... Saturday... Because I'm checking in on this on Friday. Day late, dollar short. Story of my life, LOL!

  4. Yeah, well, no pancakes for me for a while...and we haven't bought Bisquick in more than 5 years! And now one of my doctors wants me to jump-start with the South Beach Diet (have any good recipes that will work with that??? Thought not! *wink*), and the book says to avoid certain things for the first phase (2 weeks): bread, pasta, rice, potatoes (both white and sweet), corn, carrots, dairy (except you can eat some cheeses--thankfully! Or else I would bury my head in the dirt for the 2 weeks). Bloodwork came back not good last week, so now I should be avoiding this blog like the plague! But I guess I needed a Ruthy fix as I'm struggling with working on the church directory here at church... (And my hubby was here for a meeting with the pastor and another elder and the 3 of them invited me out to lunch with them, but I didn't dare, so stayed behind to work in the ever-increasing humidity and work on sugar-free bubble gum *POP* and a bottle of water.

    Nuff pity-partying. Hope the pancakes were good! Me, I'd rather just eat the pancakes, then have the "chips" as a snack for later in the day... ;-)

    1. Melanie, go to my Salads post because I (most times) live a high protein/veggie low-carb diet.

      So what I show here, isn't always what I put in my mouth, LOL! Seriously, the broccoli slaw salad base is something you can eat constantly and it has almost no carbs. If you stay high protein and low carbs, the weight comes off... It did take a little getting used to, to keep my hands off cookies, etc. But that broccoli slaw salad is divine... and I can eat all I want, whenever I want. SUHWEEET! Click the post log on the right that says "Salad Days Ruthy-Style".... I promise it works. Sincerely.

They have a low-fat version? :) I get the honkin' HUGE box at Sam's and there isn't a low-fat version of that, but I figure if I'm nibbling carbs in this way, a few fat grams aren't gonna kill me. FAMOUS LAST WORDS, LOL! But if you're counting calories, not carbs, then the low-fat is the way to go, right?

  7. I used to make pancakes every Monday morning, and a variety of flavors. When you use that method of adding extras, you can make them to order! I've never tried the peanut butter chips, though...

    But I did find that the mini chocolate chips sprinkle better.

    Now that I'm retired from homeschooling, we have pancakes for supper once in awhile -- I'll have to try this version for dessert :)

    And Melanie, keep coming by! I don't think any of us eat the way the blog sounds like we do...we just like to dream :)

    Lunch for me was a black bean and corn quesadilla. Some version of that should be on the South Beach diet, shouldn't it? Maybe not the first two weeks, though.

    1. Jan, exact-a-mente, my friend! Having the recipe doesn't mean we get to eat it all, right? BUT... I love to have quick fun ways to feed folks. Either the little kids here or the big ones that come home or the aging ones.

      Mini chips work better except that they don't sell a Ghirardelli mini chip up here. So I go with the big guys because they're Ghirardelli. And Sam's club just started carrying the Reeses peanut butter chips, $4 for two bags, and they're a great thing to keep in a canister for an extra punch of flavor in lots of things. One of my favorite frostings is peanut butter buttercream frosting, but I think I bested it with Dark Dutch fudge peanut butter frosting for that wedding two weeks ago. Oh mylanta, I'll post the recipe soon, very easy, and melt-in-your-mouth good!

    1. Hahahahaha! I never did either, but found that it's a great 'baseline' for so many things. I think it was Paula Deen that suggested it for something and I tried it.... and while it seems a little silly because biscuit dough is easy-peasy, there's a tenderness about Bisquick stuff that's got a great texture. Of course I just plain love food!!!! Sigh....

  9. Sinful. Absolutely sinful. My 97% fat free hot dog just lost its appeal.

    However, I have two boys who would love this, sans the peanut butter chips. Chocolate chip pancakes with whipped cream, the spray can variety, sounds pretty tasty to me.

    Okay, I need to find some dessert.

    1. Fat free hot dog is just wrong on so many levels. :)

      Yes, this is an excellent dessert. And hand-snack when cold. The pancake consistency is perfect for picking up and eating.

      And I'm out of spray can whipped cream. Kind of sad. Must buy some this week because I like to squirt it in kids' mouths. We're so rustic here!
