Cake in a Mug Even Ruthy Can Love

Thanks to Jan, I, too, am adopting the Trim Healthy Mama lifestyle. 
I'll admit that it takes some getting used to, and there is still much I have to learn. 
But it is working. Aside from losing weight, I'm sleeping better and I don't feel bloated anymore.

That said, there are two things I cannot go without--chocolate and sweets.
Okay, in most cases, chocolate is a sweet. So shoot me.

On most diets (I hate using that word), those two things would mean sabotage. 
But whether you're gluten-free, low-carb or just cutting out the sugar, this is something you CAN have.
AND, it's actually good!

So here's what you need:

  • 1 egg
  • 2 heaping tablespoons unsweetened cocoa
  • 3-4 teaspoons Truvia
  • 1/2 teaspoon baking powder
  • A dash of vanilla
  • 1 tablespoon water
  • 1 level tablespoon coconut oil

 And, of course, you need a mug. :)

Crack the egg into the mug and whisk well with fork. Add remaining ingredients. 
Doesn't look like much, but just wait.

Stir vigorously until combined.

Microwave for one minute. Yep, that's it.

Turn out onto plate.
This is really a good-sized portion for one person.

I like to slice mine in half and add a couple squirts of whipping cream for a little extra sweetness.

Unlike the Cake in a Mug recipe I shared last month, the one with the funky texture, 
this is very moist, soft and very cake-like. With virtually no carbs!

Whoo-hoo! I can have my cake and eat it too!

So what's everybody been up to? 
I feel like I've been treading water since Christmas. So much to do, yet not accomplishing any of it.
Something that has GOT to change. And soon.
So if someone could push the pause button on this thing called life, I would be most appreciative. ;-)

  2. At least I didn't have to drool over cake while I was eating gruel this morning. :-) I usually try to read my go-to blogs first thing before I go out to work. I've yet to try this mug baking...not sure if my fairly old...at least 10 years?...microwave could manage it, but i definitely have to check it out. And love that it is portion controlled. And I've never baked with truvia. You are expanding my culinary horizons.

  3. Kav, there's nothing worse than drooling over gruel. Such a visual image. :)

    You might have to go a little longer in your microwave, but I'm sure it could handle it. Just a matter of figuring out the right timing.

    And you are so right about the portion control. If it were a whole cake, I'm sure I'd do my best to eat it all by myself. :P

  4. I love this cake! But I haven't made it for a while - thanks for the reminder!

    I'm loving the THM lifestyle. My clothes fit better (even in a smaller size), I'm sleeping better, I have more energy...I just feel plain GOOD. I've never felt that way on a diet before.

    Let's see...what have I been doing lately? Writing. And writing. And writing. I have more projects flying around in my head than I can shake a stick at - and last week three more stories popped into my head.

    1. Jan, I'm not sure my brain could handle much food right now. Although I am trying to keep up with my Luminosity exercises.

      I still can't wait to try that pb mousse you shared yesterday. Must buy the ingredients. I can't say I've got more energy yet, though I'm not as sluggish and my brain is clearer. Now if I could just stop thinking about food all the time.

  5. Now doesn't that look yummy. I am addicted to 100 calorie Klondike bars. Trying to get off the addiction. I only eat them for the chocolate coating. So pitiful.

    Now drinking 25 calorie fat free hot chocolate as a replacement. Works well except for the fact that it is 90+ degrees here.

    1. Hello, Tina and welcome to chocoholics anonymous. You're safe here. Although your Klondike bars might not be. :)

      Yeah, even my tea addiction wanes when the temps go up, so I know what you mean. We've been cold lately, in the 30s this morning, but I know the 90s and 100s are right around the corner.

  6. Mindy, do you not need any almond meal or some type of flour??? Does that really make a cake? :)

    I've been having M&M withdrawal. But I haven't bought any for a couple of weeks. So the craving is easing. :)

    1. Nope. No meal, no flour. It's exactly as you read it. And it makes a soft, moist cake.

      Trust me on this one, girl. You gotta try it. It's not going to take the place of M&M's, especially the peanut variety, but it'll sure help take away the longing.

      If you compare this recipe to the Muffin in a Mug I shared a few weeks ago (http://yankeebellecafe.blogspot.com/2014/01/muffin-in-mug-my-journey-to-becoming.html), you'll see that this has practically nothing in it. And it's much lighter than the muffin - much less filling.

      The perfect chocolate treat, right?

    1. Susanna, I make sure to rinse it or fill it with water as soon as possible. So far, clean up has been a breeze. :)
