15 minute easy dinner- Huevos Rancheros

Hello everyone! I thought this dish had been done here, but I'm looking and not seeing it so.... here we go!
 You'll need olive oil, some corn tortillas, some beans (refried out of a can is fine, but I'll use some that we made a few days ago), lettuce, eggs, salsa.
 Brush the tortillas with olive oil on both side, sprinkle lightly with salt, and put in the oven at 400F for 12-14 minutes. Some people like them softer, and some like them more crispy.
 While the beans are heating in the microwave, get the salsa bubbling on the stove. When it's ready, drop in your eggs.
 Put a lid on and wait about 3-4 minutes until the egg white is opaque.
Take out your corn tortillas and lay a few on a plate.

 First layer is beans, then the salsa and an egg. Add some lettuce and chopped tomatoes if you have any. A bit of salt and pepper and --- DINNER!

My ten year old son can make this dish, so don't be afraid! It's super easy simple, and nutritious, too. Lots of protein in the beans and egg, vegetables in the salsa and lettuce, and fiber in the tortillas. Low fat and good for you!

  1. yum! but my eggs have to cook til DONE LOL! I've never had the real deal before- friend gave me a cookbook with a 'speedy' version but this seems about the same time (though my eggs scrambled and were all the way done) this looks more appetizing than the mess I had (but it still tasted good!) now I'm hungry and want some of these! I had to roll mine up in carb balance tortillas like breakfast tacos 'cause they weren't pretty...

  2. My sister is the same way. She would not touch this with a ten foot pole, haha! But I love runny eggs. Delish! I'm sure you could cook them completely, too. In fact, I had to hurry and get them off the stove before they cooked all the way through. A few more minutes and they'd be fully done.

  3. Wow -- I would never have thought this up in a million years. I always thought salsa had to be cold. Who knew you could heat it up? And throw eggs in it?! I'll definitely be trying this...I mean really, if a ten year old boy can do it then so can I, right?

Kav I like to cook potatoes in salsa - guy at work brings stuff his wife makes and she had something similar (only better!) and he said it was just potatoes cooked with salsa then she put in a tortilla and folded in half and sorta pan fried in olive oil or whatever oil she was using at the time. love salsa! :-)

    2. Kav, and you know how kids are... They LOVE cracking eggs. I just have to remind him "not so hard" because I don't want shells in the food!

  4. Fits all my requirements, Virginia. :). I love my eggs runny too. Doubt I could get my boys to eat this, but it sounds perfect for hubby and I. Can't wait to try it!

  5. That's the wonderful thing... you can make it as big or as small as needed. We had five people wanting to eat, so I used five eggs.

    2. oops sorry - looked it up and it's a TexMex thing so guess Mindy will have to do it LOL! I thought it was Mexican but the guy at work says his wife makes them for their son...it's eggs and the usual beans and salsa and what-not but you cut the corn tortillas into strips and they sorta cook into the eggs but I never know when to do what...

    4. I had them at a quilt retreat a few years ago and there was a bunch of grumbling about them not being 'the real deal' but there's an awesome restaurant/bakery in Galveston that offers them on their brunch menu - the plate is full with migas then refired beans and a tortilla - big tortilla.

      I found this recipe online and might try it but now I see how it varies with about 12 ingredients listed as 'optional for garnish' and 'optional for serving' LOL!

      looks like I messed up by cooking the toritllas pieces in the egg instead of doing them before adding the egg...

  9. I'm sorry to be late to this party, but Virginia, this looks marvelous!!!! What a fun, easy dish and I bet it's a beloved favorite!!!!! And I love, love, love the pictures.

    I have to have my eggs cooked, too, but the rest of my family is over easy dunky-egg crazy, so they'd love this. I can eat raw egg in cookie dough, though, so I'm clearly VERY STRONG!!!!

    I love how you blend the fun of cultures in your cooking and your life. I see that with my oldest daughter, too, and it's a great melding.

    Oh, wait, I think I adopted you last week when we both turned up with Mr. Coffee Latte makers the same day.
