Before I subscribed, I would jot recipes on scrap paper in my purse. This is one of those recipes from the April 2012 issue. I made it last week.

Ingredients
- 1/2 cup mayonnaise
- 1/3 cup buttermilk
- 1/4 cup chopped fresh chives
- 1/4 cup coarsely chopped flat-leaf parsley
- 1 tablespoon chopped fresh tarragon
- 1 tablespoon fresh lemon juice
- 2 anchovy fillets packed in oil (drained, chopped)
- 1 chopped garlic clove
- Kosher salt and freshly ground black pepper
Preparation

In a processor, purée the first 8 ingredients until smooth. Season with kosher salt and freshly ground black pepper. DO AHEAD: Can be made 2 hours ahead. Cover and chill.

So that was the recipe off the website. Now, I'll share the photos and my own comments...
Oh, and I couldn't resist! Some cilantro (below) that I bought at the same time I bought the dressing ingredients. I had to throw it in the photos for those of you who said they can't stand it. LOL

Then I chopped the anchovies. Okay, I'll admit, I was scared of these. I'd never bought them before. But I've always loved Ceasar dressing and thought I'd give this a try.
Then I tossed it all in my small smoothie blender (which I love!)
Look what a beautiful green it is!
Note the bottle of lemon juice in the back. I forgot a fresh lemon!
I grabbed a few salad greens, tomatoes and some broccoli to make a side salad. Then added my dressing.
This dressing is so fresh and earthy. But I admit, I'm going to leave out the anchovies next time. I had trouble getting the taste out of my mouth! I'm not sure if it was just too much (maybe one filet would have been enough). Or maybe the brand was stronger than others. Either way, I'm leaving it out next time and will really enjoy the fresh herbs and lemon. :)

I've never heard of this, but I did have a BA subscription for about 5 years before I got married. I have all those mags stored in a special bin where I sort through them, especially near the holidays. LOVE it, love the pictures.
I like anchovies, but I'm not sure about them in a dressing. And the color is SO pretty!!
I'm absolutely going to try this. Anything that makes me eat more salad would be a really, really good thing. :O
LOL!!! Don't worry about the green goddess feet. There was NO cilantro in the dressing. :) HOWEVER, I think I may add it next time just because I love it. :)

Susanna, I've thought something about it reminded me of soap, too! LOL But I love it anyway. I love going to Moe's or Barberitos and having them add extra cilantro to my taco. :)
DeleteI'm so glad you admitted you're going to leave out the anchovies next time, because as I was reading I thought how good it all sounded... until I got to them. Just not something I can eat without gagging. I'm not big on cilantro, either, but since that's not an official ingredient nobody in my family will miss it if I leave it out, too.

Carol, if you make it without the anchovies, let me know what you think! I'm sure they add some richness, so I'm not sure if anything in their place would help. Maybe a little olive oil?

ReplyDeleteMy biggest problem will be finding a salad to eat it with. Lettuce is usually iffy in our neck of the woods (way too far from the trucking route for fresh veggies - lettuce suffers during the extra day of transit), but this summer it's been abysmal.
I know! I'll keep the recipe with my grocery list so I can buy the ingredients if the lettuce is worth buying when I'm at the store!

ReplyDeleteWeird synchronistic thing is I was just thinking of Green Goddess dressing the other day and I've never even tasted it. I thought it had avocado in it (which was why I was thinking of it.)

I need to find (or figure out) a recipe for a dressing. I got this vegan salad for my daughter the other day and it had some kind of cilantro-avocado dressing. The rest of the salad was quinoa, black beans, corn, tomatoes, and tortilla strips. It was SO delicious!!!!

DeleteBelieve it or not I've never made salad dressing! Isn't that weird? And me a vegetarian! Shameful!!!! Never heard of Green Goddess dressing either. I'll give it a go without the anchovies though. any idea on how long it would keep in the fridge?
ReplyDeleteKav, I have no idea. We just threw the last little bit away since it was almost a week old. Without the anchovies, though, I imagine it could keep a couple of weeks as long as you refrigerate it right after you make it.

Kav, a vegetarian? Have you seen the Vegan Gourmet Cookbook? I lived in Eugene, Oregon for 5 years and they call it Vegetarian's Paradise. Every restaurant worth its salt has a veg menu. I loved to cook for friends, but most were vegan or vegetarian so I had to adapt.

Thanks for sharing, mary! That's interesting. It has basil in it, which I love. And used avocado for that creaminess that the anchovies add. Great substitute! Plus it mentions sesame tahini--which I adore! I love hummus.
DeleteOh Mary!!!! Thanks!!!! That Vegan Green Goddess recipe looks divine and it has avocados in it. Yum. Only keeps for five days though so I'll have to wait and make it for company or when I'm going out to a potluck.
ReplyDeleteVirginia, I haven't heard of the Vegan Gourmet Cookbook but I just checked and my library has it so I'll check it out. I have some really good plain home cookin' kind of cookbooks that I draw from and the recipes from classes I've taken over the years. And there's this excellent vegan restaurant in town that published it's cookbook. Oh la la! The desserts -- to die for. But a lot of work. Cooking vegetarian isn't for the faint of heart!
Kav, I don't know how you do it. My sister is vegetarian, and it's tough to cook for her when she visits. I'm just such a carnivore, it's hard to think that way! :)
