Sometimes something happens to change your plans.
My daughter and I were in IKEA this week and I saw this very cool muffin mix, so I had to try.
Okay, I know this is the CAFE and you all bake everything from scratch, but this was so easy I wanted to give it a try. Plus Lemon. I 💗 lemon.
This is the container.

All - ALL - you have to do is add a cup of water and shake.
Then you pour directly into the muffin tins.
I added blueberries. Lots and lots of blueberries because muffins never have enough blueberries to make me happy.
Waiting for them to cool so I can sample.

Oh, no, Ruthy! Triple berry muffins should never be a fail. I was having such cravings for triple berry scones a few weeks go. I remember having a really good one, but I can't remember where I had it!
DeleteOkay, amending because that make my memory sound even worse than it is. It wasn't a few weeks ago that I had them somewhere. It was a few years ago. I wanted them recently.

Product review works for me. This was really light, so perfect for pairing with fruit. I'd meant to buy some poppy seeds to try lemon poppy muffins. I guess I'll have to go back to IKEA.
DeleteI should mention that they have the same muffins in chocolate. Now that I've had the lemon, and see how light they are, I'm thinking the chocolate might be more like a light cupcake. Definitely worth trying What I liked best is each muffin only has 35 mg of sodium. Usually backed goods are ten times that.

DeleteIKEA has muffin mixes now? I'm gobsmacked. I wonder if ours does? I haven't been to IKEA in years. It's hard to bus too and then quite a hike in from the bus stop which would be brutal in this heat but once I got inside there'd be blissful air conditioning and loads of cool walk miles. And maybe a lemon muffin mix for a reward. Hmmmmmmmmmm......

ReplyDeleteHa! It's available online on the Canadian site but it's $5.99!!!! That's pretty expensive for a batch of muffins, I think. Bet it's a lot cheaper in the states.
DeleteI think it was the same, but it made 12 muffins. If I went out to buy a muffin it would be $3.00 so I figure this is a bargain. ;)
