Now, though, there is no waiting. We live surrounded by the Hills! Although I'm planning a quick last-minute trip to the Rocky Mountains sometime in the spring. We'll have the trip planned, then when the weather is right and work schedules cooperate, we'll take off. After all, Rocky Mountain National Park is only six hours away! Yellowstone is only eight hours! And the Big Horn Mountains in the picture below are only a three hour drive. Stay tuned - we'll see if we really do it!
Meanwhile, I had forgotten about this snack idea. I love the cheesy filling in the tortilla rolls. Yum! I hope you enjoy this recipe reminder as much as I do!
And in the post I mentioned the Black Hills Stock Show. It's still two weeks away, but we saw the cowboys rolling into town this weekend, getting ready for the pre-Stock Show rodeos and sales!

Chipotle Chicken Roll-Ups
Sometimes I feel like Bilbo Baggins, longing to see mountains again.

It's the middle of winter here in the Black Hills of South Dakota, but a winter with a sense of humor. We've had lovely days in the 40's during the week, and I start thinking of a trip up into the Hills on Saturday...but then a cold front with snow blows in, and by Saturday no one is driving anywhere that they don't have to.
And then the next week it happens all over again!
So I'm getting a little bit of cabin fever and longing for sights like this one.
But there are a few bright spots to make the winter go by. For one thing, in a few weeks we'll be knee-deep in cowboys!
Big ones and little ones all come to the Black Hills Stock Show and Rodeo. Always a fun time!
And then, of course, there's football. There were some great playoff games over the weekend, and next weekend promises to be just as exciting!
I can say that because my team won this weekend (Go Broncos!). :)
So it's time for game-day snacks.
This recipe is a blend of ideas I found on line - -
Chipotle Cheese Roll Ups
The filling is the key part of this recipe!
ingredients:
8 oz cream cheese, softened
2-4 Tablespoons chipotle-ranch salad dressing
2 teaspoons dried minced onions
1 can Chicken Breast, shredded
1 cup shredded cheese - taco blend, cheddar, colby-jack, or whatever sounds good to you
1 teaspoon garlic powder
1/2 teaspoon oregano
Mix all of the ingredients together until you get a fairly smooth cheesy/chickeny concoction.
The ingredients I used makes a fairly mild spicy filling. If you want a little more heat, add some chili powder, or a can of green chilies, or whatever sounds good to you! I have one son who would dice up a jalapeno pepper and add it in.
Spread the filling on a flour tortilla, about 3/8" thick.
Notice that I laid the tortilla on top of a piece of plastic wrap before spreading the filling on. You'll thank me for this tip in a minute.
Roll up the tortilla, and then roll the tortilla in the plastic wrap.
(See? You're thanking me now!)
Refrigerate the rolls for at least an hour, then unwrap the rolls, slice and enjoy!
Another variation I'd like to try is to use puff pastry sheets or Pillsbury Crescent Rounds instead of tortillas, and then slice and bake them. According to a recipe I saw on Pinterest, you would bake them for 12-15 minutes at 375°.
Another great use for this filling is as a spread for crackers or celery. Delicious!

One last update - I still enjoy watching football, but I don't get to anymore. Since we've moved, we no longer have television reception. Sure, we could pay for Dish or another satellite service, but we've decided to go with streaming channels instead. So we have plenty of movies to watch (and I'm enjoying Murdock Mysteries on Hulu!) but no network television. (We really don't miss it!)

Jan, these look yummy. And yes, I'll be watching the Super Bowl, grateful that the Patriots aren't in it. Sure they're a good team, but it's nice to see some other teams for a change. And I might just have to make these rollups to nibble on while we're watching. Then again, that day is also hubby's birthday. My little groundhog will be turning 70 (Shh), and that is definitely something to celebrate.

DeleteIn my husband's family (and ours as the children were growing up,) on your birthday you 1) don't have to do dishes, and 2) you get to watch whatever television show you want. So if hubby wants to watch the Super Bowl on his birthday, then he gets to watch the Super Bowl!
You'll just have to plan a big party. :-)
I'll answer your last question first. I've never been into football. I was always a baseball fan and maybe a little basketball. But my husband was a rabid Patriots fan, so last year I watched in his honor, a little sadly, knowing how much he would have enjoyed that championship. It seemed unfair that his teams (Red Sox and Patriots) both won after he passed, but we kind of figured it was because their #1 fan was cheering from up above.
ReplyDeleteAnyway, they were out of the playoffs early this year, so it was kind of a relief (heresy!) not to have to worry.
As for your recipe - you threw me. I kept waiting for you to cook it, but you refrigerated it instead. My ideal of that recipe would be to put all the cheesy goodness inside the rollup and then bake it until cheese oozed everywhere. But that's just me.
I hope you get that Rocky Mountain trip. I'm setting a book in Idaho and really want to travel there. I'm settling for videos and VR at the moment.
I'd roll the filling up in puff pastry or crescent roll dough and bake it to get that cheesy goodness. Oh, that sounds so good!
DeleteI hope you get to travel to Idaho some day! When we went to Yellowstone a few years ago to celebrate our anniversary, we drove through Idaho on the way between Yellowstone and Grand Teton NP. I was surprised that it wasn't mountain country on the eastern edge of Idaho since the Tetons are so close! But beautiful farm and ranch land. We just didn't drive far enough in to the state to find their mountains!
I'm still gobsmacked over your breathtaking views! Who needs cable tv when you can look at that all day long?! And no, never a football fan and used to hate how it took over broadcasting this time of year. Like you, I don't have cable now and only watch a few favourite shoes online so...hooray...no football interruptions for me! lol

DeleteWe've been enjoying the freedom of no cable television for several years now, but since we've moved, we don't even get broadcasts with our little antenna. Television freedom...I love it. :-)
Jan, we went to YouTube TV to cut the cable cord a few years ago and I love it... because Dave and the kids love their sports and it was 1/2 the cost of cable. Or less, actually.
