Walnut-Crusted Cranberry Pork Roast
Okay, this was a game-changer meal, like fancy restaurant style and so crazy delicious that I would give it a five star rating...
And fast.
Like super fast.
So here's what you need:
A pork roast
1 1/2 cups finely chopped walnuts
4 oz. of cranberry or cranberry apple jam or chutney
Put roast in pan. Sprinkle with salt and pepper.
Spread jam over roast.
Cover jam with nuts.
Bake at 350 degrees for 30 minutes/lb.
I peeled and cut up two apples to roast alongside, and the apples mixed with the fallen nuts and cranberry-sweetened meat juices to make a great side dish!
THAT'S IT. A classic and classy restaurant-style meal in five minutes plus baking time. And it was out of this world delicious, the roast stayed moist and succulent because the crust of nuts kept the juices in... or something like that!
And the side of potatoes was a fun Yankee classic:
Herb-buttered Potato Wedges... I'll tell you how I did that fast, easy dish next week!
And this is what I've got going after our mini-ice-storm:
I'm so glad it wasn't a whole tree section because it rolled off the new family room.... but did no damage.
Might be time for that monster Silver Maple to come down????
It's the only major shade tree on the west side of the house, but if there is no house, it doesn't need shade, right? :)
And Sr. Eileen made this Cranberry Apple Chutney and I bought it at the Sisters of St. Joseph sale last November and this was the perfect way to use it. I can't wait to tell her!!!!

And right now we've got crazy strong winds, the clouds are racing across the sky and I think our gusts are close to 60 MPH....
What is happening??? And after temps soared to 50-something overnight, they're dropping to the teens now.

This pork dish sounds good. Wonder what it would be like in the smoker? We have been on a smoker kick off and on since we got an electric smoker. Perks of getting a good discount! Pork has been one of my favorite things to make. We even made BACON! You can keep all that icky weather over there please. We finally had a good day and we were at work :( but we did come home and grab the dogs to run errands with us after work! They didn't care what we were doing. We were all together and it was nice enough for them to chill in the car while we went to the not so dog friendly stores. Oh the spring days are coming though!

DeleteKatie, I think the smoked pork would work great... but I wonder if the smoke would penetrate if you had the jam and nuts on it first?
DeleteAnd we had a break in the weather today, upper thirties, like a Heat Wave! :) And by 2/14, you know that you're only looking at another 3 or 4 weeks of Arctic... then we get Sub-Arctic.... and then just cold. :)
And then summer!!!
Wait....where has all your snow gone? Haven't you been getting the same crazy snowfalls we've been getting? I think it will be June before all the snow melts. So glad that tree limb did't do any damage and sad that the tree might have to go. There's something so noble about a big old tree -- oh the stories it could tell!

DeleteHey, we got a thaw and rain... and then cold and snow and ice and snow and sleet... but it's only a few inches. I think a few of the storms either angled north first (hence YOU!!!) or went straight across the U.S. and out to sea. But the crazy cold has been annoying. :)
Ooo...I'm liking the sound of this, Ruthy. I wonder how it would be with pecans instead of walnuts? We love our pecans here in Texas. But I especially love that this is quick to assemble and then you're done.
ReplyDeleteIt's great with pecans, that was the original recipe but I was out and had walnuts in the freezer. :) So yes, try it, and I expect it would work with any jam, too, except that strawberry might be too sweet...

Jan, I've been buying the whole loins on sale and if you take a 5-6 inch roast from each end, the rest are perfect chops at 1".... And this made the pork so crazy moist and delicious, it became an instant favorite and Dave's already asked for it again... so that's like a 5 Star Rating on Amazon!

ReplyDeleteHey, if you find any sweet/tart jam, I bet it works. Like current/apple or current/raspberry.... I actually think any jam will do, so I'm going to try with Triple Berry next time. That's our current favorite jam!
DeleteBTW, I hate to brag, but our weather is gorgeous today! I ate lunch in the car (Chick-Fil-A!!) with the sunroof open and windows down!
