Zucchini Noodles -- Getting Creative

I tried an experiment recently. I wanted to make zucchini noodles (zoodles) but didn't have a spiralizer (yet!), so I dug out a tool I've had for years to find out how well it might work.

My mandolin. This is a tool that just proves what a sucker I am for a good marketer. I went to Belk to buy a pillow one day and came home with this thing after watching a live demo! ("It dices.") :)

Well, it didn't have the ability to spiralize. The best I could do was cut my zucchini into matchsticks. I was hopeful!

I decided to have shrimp with zoodles so peeled the shrimp.

Then I cooked the shrimp and zucchini in a little butter and added some spices.

It didn't turn out very well. The zucchini was rather mushy and a little watery.

Not very appealing in the photos. After dinner, I went online and ordered a spiralizer. I sure hope it makes better zoodles. I plan to share the outcome in another post later.

My fingers are crossed for something yummy!

  1. I have never had zoodles. Spaghetti squash is a good sub for noodles! Once I tried making a zucchini hash and it was also a fail because of all the moisture. Can't wait to see your update. We gave up on the mandolin (something about me and sharp objects not going together) and got a food processor. I love it for all my things slicing and shredding needs. Recently upgraded to a Ninja that has the blender, food processor, and mug attachments with one base! It is the best and we have only used the mugs for morning shakes!

    1. Katie, my daughter has a Ninja and I've missed it since she took it off to college with her! I keep debating buying one for myself. I made a lot of smoothies in there. :)

    2. We got the kitchen system for $130 at Sam's club. Regular there is $180 so it was a deal! I have a smaller Ninja chopper too for the little things that I LOVE.

  2. Ashamed to say I have a spiralizer that I ordered 6 months ago on a whim from Amazon but I haven't taken it out of the box yet. Maybe you will inspire me.

    The shrimp looks good though!

    1. Mary Cate, you'll have to pick up some zucchini at the store and give it a try. One reason I didn't order one for so long was because I feared that very thing! LOL

  3. I love zucchini noodles! I have a tool from Pampered Chef that makes them (only enough for one, but that's all I need.)

    The trick is to cook the zucchini separately. I do mine in a frying pan with a little butter or coconut oil. Cook and stir for about 1 or 2 minutes - that quick, and they're done!
