Creamy Potato Soup

Jan here, newly returned from a trip east. We visited family, I did some research and talked with some readers, we had a tour of Baker Publishing in Grand Rapids, Michigan... in short, it was a great trip!



When we arrived home yesterday afternoon, we had driven more than 2400 miles, spent 44+ hours in the car, weathered heavy rain in Michigan, heavy snow between Sioux City and Sioux Falls...and we were ready to be HOME!

When the Black Hills appeared on the horizon, we breathed a sigh of relief.

BUT, then comes the perennial question: What's for supper?

This is one of those times when I was glad for my pantry!

Creamy Potato Soup

ingredients:

1/2 onion, diced small
1/2 cup butter
6-8 medium potatoes (I used reds - so sweet and creamy!)
4 cups chicken broth
1 cup milk
1/4 - 1/2 cup flour (depending on how thick you like your soup)
1 cup heavy whipping cream
seasonings: garlic powder, salt, and pepper to taste

I fixed this soup in my Instant Pot, but you can easily cook it on top of the stove or in your slow cooker.

Melt the butter in your pan (in a separate pan if using your slow cooker), then saute the onion until it's transparent.

Meanwhile, wash and cube the potatoes.

Add the potatoes, chicken broth, and seasonings to the pot. Cook until the potatoes are tender.
(I cooked the soup for 5 minutes in the Instant Pot, then used the natural pressure release - about 40 minutes total.)



Whisk the flour into 1 cup milk until well blended. Add to the soup. Heat, stirring occasionally, until the soup is thickened.


About 3-5 minutes before serving, add the 1 cup cream. Taste and add more seasonings if desired.



It was a delicious homecoming meal!

  1. Good morning, Jan -- Sounds YUMMY and perfect for a cold rainy/snowy day. What can replace heavy whipping cream for family members who are on a no-fat/low-fat, no sugar/low-sugar diet? Thx!

      Would you believe Evaporated Milk is a low-fat substitute for cream? I learned that by watching an old George Burns and Gracie Allen show. They incorporated commercials into the show (lots of fun to watch!), and one of the commercials was about using Carnation Evaporated Milk as a substitute for cream.

      The flavor is slightly different, but not much. And the evaporated milk gives the consistency of the cream.

      And of course, you'll want to leave out the butter! You can saute the onions in a little bit of chicken broth instead.

  2. Oooohhhh —- this sounds good! I can easily use veggie broth instead of chicken broth. I love hearty soups in the fall! Can’t believe those road tripping hours — driving through snow in October should be outlawed! Glad you made it home safe and sound!

    1. Yes! You can easily substitute veggie broth!

      And we're so thankful that we were able to drive between storms this weekend. A day either way would have had us driving through snow for many more hours than we did!

    Wow! You hit snow. Exciting when you're indoors watching it, not so much when you're driving in it. Glad you are home safe and sound.

    1. Yes, that stretch between Sioux City and Sioux Falls was dicey yesterday morning. It reminded us why we need to plan our trips so that we'll be home between October 1st and March 30th...or April 30th...

      Some years, the snow comes early and stays late, and we'd rather not be on the highways!

      And the soup was delicious. :-)

    1. I like it with cheese, too, Missy. And maybe some bacon bits sprinkled on top... But I went with what I had on hand and it was still delicious!

    Jan, what a wonderful recipe to share for fall and what a trip you had. Aren't we so stinkin' blessed to have a pantry? A stocked cupboard is a wonderful thing and if there's a freezer, too???
