How Many Ways Can You Do Chicken Salad?

We went to visit my in-laws down in south Georgia earlier this week. I kept wanting to take photos to show you of the huge trees, mainly live oaks, draped in Spanish moss. So very southern! Alas, we were usually driving and couldn't stop.

While out of town, I didn't do any cooking that I could share today. However, my husband's parents took us to a new restaurant that we really enjoyed! I wanted to share the unique menu. They sell...

Chicken salad. A huge variety to chicken salad! (Plus side dishes and pimento cheese, soups, etc.)



The place is called Chicken Salad Chick, and it was started by a stay-at-home mom who loved chicken salad and was always looking for the perfect recipe. The restaurant has really taken off! You may even have a location near you soon.

I chose one that had dried cranberries and slivered almonds. And I also got a scoop of pimento cheese just because I couldn't decide between the two. :) They were SO GOOD! 


For my side dish, I got the broccoli salad. I'm sure y'all have probably had this at a covered dish (potluck) dinner sometime. It's one of my favorites--yet I've still never made it.

Fresh broccoli in a sweet dressing, bacon, and cheese. This one didn't seem to have raisins like I'm used to, however the sweetness came from the dressing.


At my in-laws house we also had some good ol' Georgia peaches from a local farmer's market--Mark's Melon Patch (which I think I've posted about before).


So, the big question today...

  1. What a cool idea, Missy. I always love when someone can take a passion and turn it into a career.

    My favorite chicken salad recipe had apples and tarragon added to the chicken and mayo. I used to make it all the time.

    Is pimento cheese a southern thing? I know I've seen it in the store (processed), and maybe I tried it years ago - not sure.

      Mary Cate, I guess pimento cheese is southern, although that surprises me. It's something I've eaten for my whole life (in Kentucky and Georgia), so I guess I've always figured everyone does. :)

  2. Congrats again on the novella, Missy. And that restaurant looks like someplace I would love. I always add dried cranberries and sliced almonds to my chicken salad. And who can turn down pimento cheese? Broccoli salad looks yummy, too. Thanks a lot, Tippens. Now I want lunch. And chicken salad. Sigh.

  3. I love chicken salad, Missy! It's so good... and I would like that cranberry version... and I like it with chopped grapes and walnuts... and then typical New England with simply chicken breast, celery, onion (if you can eat it) with salt, pepper and Hellman's mayonnaise. This is a perfect simple recipe that works well with lettuce and tomato on a Vienna roll.

    I love chicken salad!!!!

    1. Ruthy, I love a grape and nut version as well. But I usually make the standard with celery, onion like you (with Duke's mayo). And I also like to add chopped boiled egg!

  4. My favorite chicken salad is one someone else makes. ;-)

    But seriously, I love them all. When I make my own, I'll experiment with different ingredients, but my favorite is the old stand-by Ruthy talked about in her comment.

    And then come the big quandary... Do you eat it alone? Or as part of a big lettuce salad? Or as a sandwich on toast? Or a croissant?

    Any of those work for me!

  5. Yum! Now I want chicken salad for lunch. My farmer husband will not be happy with chicken salad for lunch haha. Chicken salad shows up at my house during harvest and planting season. During those times, I most always take meals(no chicken salad ha) out to the crew so they don't have to take time off and drive to town for lunch and dinner. Then I come home and enjoy CHICKEN SALAD to my hearts content :)))) I don't have this every day of course, but by the time the season is over, I'm tired of it...till next season!!!

  6. I now need to pick up a precooked chicken and make chicken salad! You know what I like more though is just some leftover chicken or turkey warm with mayo as a sandwich. It is the best. I have no plans for dinner tonight and I am on my own. Maybe a trip to sams for chicken is in place.

    2. I actually made chicken salad yesterday. After work for lunch. Got a rotisserie chicken from Sams club on my way home from work and broke it down. Used my chopper to chop the chicken and made my husband lemon pepper chicken salad and myself cucumber dill. We had enough for lunch today and tomorrow too. Had them as sandwiches on Kings Hawaiian buns. It was amazing. Thank you for the idea!
