Hawaiian Shrimp Roll

One of the things I'm finding difficult this summer is coming up with things I feel like cooking. It's an odd combination of cooking for one, ridiculous heat, and too much snacking while I'm writing. Combined, those three things make me less than inspired when it comes to cooking.

But sometimes an idea hits.

I had some frozen shrimp, and I had some leftover King's Hawaiian hot dog rolls.

I always love the combination of shrimp and pineapple - and that just seemed the right thing for Hawaiian rolls, right?

Well, mostly right.

In retrospect, I would have cooked and chilled the shrimp/pineapple combo before serving it in the roll, but it was still tasty (if a bit soggy!).

I had a bag of sweets and beets chips, so they were my veggie.  😇



Sorry, this photo came out really dark. This was the pineapple (frozen) simmering with the shrimp.


These rolls were perfect because the top opening allowed me to easily fill the roll with the shrimp/pineapple mix.



Clearly my photography skills were lacking this particular day. You'll have to take my word for it that the dark orange on the left side is the beet and sweet potato chips. The half of the pineapple shrimp roll is that bland mess on the right.

My apologies. I had finished eating before I realized the photos were off.

So, what do you think? Would you try this combo? I'm thinking a sprinkle of toasted coconut on top would have been nice.


So, when I was buying the shrimp, I also purchased some salmon. Does this strike anyone else as funny?  My daughter and I had a good laugh at the ingredients. 



If you can't see, the ingredients say: Sockeye salmon (contains fish). Um, how about IS fish?


Finally, everyone else has been sharing gorgeous nature photos. My "nature" photos tend to include buildings, but I thought these evening sky photos were pretty enough to share.




Nary a rattlesnake in sight.  😏

  1. I like shrimp, but it would be a waste because someone else doesn't. However we could get behind the rolls! I was in New York about 10 years ago! Not your part, but still the same state. My brother got married and we DROVE from South Dakota. Ok I drove from South Dakota because my dad lived in MN so I just met him there. We even got to go to Niagara Falls! One day I will go back and do the boat ride. This year we have opted to relive another one of my childhood vacations and go to Sheboygan WI. They have a different kind of beautiful too. Maybe once we are done showing each other places each of us have been my husband and I will move onto places we haven't been such as Brooklyn. Except my next trip to NY will NOT be in a car.

    1. Good morning, Katie. My husband was the big shrimp eater here. When we were first dating and married, e'd often go down to Canal Street in Manhattan and buy a pound of shrimp for scampi. I remember one night he invited some of his childhood friends over, so he bought 3 pounds! That was a lot of cleaning and deveining!!!

  2. That was a LONG drive. I remember a family vacation driving home from Florida. My parents were tired of hotels, so we did the last trek - from Myrtle Beach to Long Island - in one straight drive (with some touring in DC along the way). I still remember the LONG drive.

    I think it's really cool that you and your husband are vacationing in each other's favorite spots. What a great way of understanding more about each other.

  3. Mary Cate, those are great nature pictures. I love the look of those buildings. Very cool and exactly what I envision when I think of living in NYC.

    My husband would love this sandwich. He's fond of pineapple on his pizza. And who doesn't love King's Hawaiian anything? Me? Not a huge pineapple fan. I like it alone or in a fruit salad, but that's about it.

    And it's not just you who finds it difficult to come up with something for dinner. What I struggle with most is adding variety. If it were up to me I'd just eat grilled chicken thighs every night, but there are other people in my house who complain if I make chicken too often. Or steak. Sometimes I just don't want to put forth the effort of certain recipes. Whatever the case, it's one vicious circle. I can't wait for it to get cool again (that might be November for us) so I can make soups and stews and chili again. My repertoire will grow exponentially.

    1. I confess I've never had pineapple pizza, Mindy. I do like pineapple and ham, so I'd probably like it.

      My favorite way to eat pineapple is the chocolate dipped kind. :)

      Thanks for letting me know I'm not alone. I always make great plans early in the day, and then when it comes time to cook, meh.

  4. I'm a shrimp lover, too, and I can imagine how delicious it is paired with pineapple!

    Since I've never lived near the ocean, I always buy frozen sea food. We have a store in town that flies in fresh seafood every day, but it's prohibitively expensive. So I stick to frozen. I like to keep a bag of those tiny pre-cooked shrimp in the freezer to saute with some bread crumbs and seasonings as a topping for salmon.

    Speaking of salmon, I laughed at that ingredients list! I know they have to list potential allergens, but really?

    1. I forgot to mention - I love those pictures. The brownstones remind me of "A Tree Grows in Brooklyn." That is a great book.

    2. I usually do the pineapple with shrimp and garlic over rice, but this particular night I wasn't wanting rice. I'm right by the ocean, Jan. but I usually buy frozen seafood anyway. The fresh is pretty expensive here, so I can imagine what it must be for you.

  5. I love the architecture in that first sky pic. My kind of nature! I love walking around neighbourhoods -- a city gal's version of a trail hike. :-) Meh on the shrimp though. I've never heard of Kings Hawaiian -- must be a US thing. Love pineapple on pizza -- with mushrooms and peppers. Yummy yum yum.

    1. Kav, I used to hear Missy talking about The Hawaiian rolls but we didn't have them here. Then all of a sudden they popped up one day in our supermarket so I tried them.

      A side note, Fenway LOVES them. I use pieces of them to hide his meds in and he gets so excited when he sees that orange bag come out of the fridge.

    I'm glad you have the rolls now!! We had some to use to make sandwiches tonight! They were rolls, so mini-sandwiches. :)

  8. Those rolls are some of my favorites! I was so excited when they made them into hot dog rolls because they make great sandwiches now, as well as sliders!!

    And Cate, I love shrimp and pineapple... I think carmelizing/cooking the pineapple would have been fun, but I love this idea. So good and tropical!

    And the cityscapes are just as pretty as the seascapes and landscapes. I love 'em.
