Versatile Zucchini Time!

Well, I love zucchini. I love that it's a long season and that zucchini makes me everything from bread to main dishes and zoodles, the spiraled zucchini noodles....

But today we're keeping it simple because between writing and mums and normal house stuff and family and dogs and dog cancer surgery followed by dog incision infection, followed by 14 days of antibiotics for said dog....

And oh, throw a farm in there!!!!

I need simple.

I love simple.

So this one is easy:

8-12 small zucchini (or 3-5 large ones, seeds removed)
3 TBSP. butter
1/2 sweet Vidalia onion, chopped
1 can diced tomatoes (or two peeled, chopped tomatoes, but the can works great for this)
sprinkle of parsley (fresh or dried is fine, use more if dried) 

Wash and trim ends from the zucchini(s). If you use big ones, cut out seeds. Cube zucchini. Chop onion into normal sized pieces.



Melt butter in large frying pan. Add cubed/cut up zucchini. Fry until zucchini is starting to brown, caramelize....  then throw in chopped onion and caramelize some more. When zucchini is almost cooked, add tomatoes. 




Heat through. Sprinkle with parsley and Parmesan cheese.

Serve.


This can be a great side dish, but if you throw some grilled chicken in with it, it becomes a meal. A really good meal!!!

And the Parmesan adds the right bite to the sweetness of the tomatoes.

Around here summer is the time for quick and easy... we do a lot of sandwiches because everyone's on a schedule.

But that's okay because winter is LONG and SLOW up here and there's plenty of time to languish over food and put on weight (sigh...) over those long, kind of dark months....

For now?

  1. Ruthy, never a dull moment on the farm for you, plus your writing. I'll be making your zucchini recipe. I created my own yesterday using zucchini, onion, green beans, spices and threw in some cooked bacon for protein. Then topped with cheese. Yum. So many great recipes using zucchini even a jam one I've done in the past. This year zucchini seems to be in abundance.

    "Her Cowboy Reunion" was a delightful read with a strong message of forgiveness. 5++ stars. I've left a review on Goodreads and will have the review on other sites when allowed. Blessings as you continue to write the series.

      And that forgiveness is key to so much, isn't it?

  3. I love zucchini!

    But so far, this year's attempt at growing them has been a bust. Lots of blossoms on the plants...but only one or two female ones so far. And if those don't get fertilized, then there are no zucchinis.

    I'm not sure what the problem is yet...no pollinators? Too much water? Container gardening doesn't work so well for zucchini?

    So I'm reduced to buying zukes in the store. Again.

    But I'll be trying this recipe soon, even if I DO have to buy my zucchini!

    1. Jan, I don't know. I know that all of our squashes and pumpkins need lots of pollenators, they are alive with bees all season long. The pumpkins might have a dozen bees/flower when they're blooming and if they don't get high activity, they don't produce... so I'm not sure.

      But come visit me and I will give you all the zucchini you want, my friend! And I missed your birthday yesterday, Jan! I was off my game!

  4. Ruthy, I love zucchini (especially roasted). So I'll definitely try this! I wouldn't have thought to add tomatoes. Love it!

    Oh, and I'm glad you like the fruit of Georgia soil--those Vidalias. :)

  5. Ruthy, I made it over hear yesterday, but the word ZUCCHINI left me speechless. Not a huge fan here. I find it almost slimy. Though I do have a chocolate cake recipe that uses zucchini and it's delicious.

    Her Cowboy Reunion, though, is something I CAN go on about. Can't wait to get my hands on that one.
