A Taste of Spring from Georgia

We're actually getting a taste of spring in Georgia! After Ruthy shared her post yesterday, I remembered photos my daughter sent me the other day and thought I'd share them with you. I hope it'll give you a little ray of sunshine if you're still in the midst of winter.

We're starting to see trees blooming! And I noticed some daffodils the other day, too. I just love this time of year when we begin to see bits of color amidst the brown.


Pink!! It makes me happy. :)


And I made a spring dish for lunch yesterday. Some wonderful spring vegetables are showing up and tasting at their peak!

 

I used to see recipes for fresh peas and wondered where to find them. I finally found them shelled and bagged at Publix Market! (Had to fish the bag out of the trash for a photo when I realized I wanted to share this recipe with y'all.) :)


I sautéed the fresh peas, sliced carrots and chopped asparagus in olive oil. Then I added some of the starchy pasta water to make it a bit saucy.

A quick note about buying asparagus. I've found that the grocery stores that display it standing up with the stems in water have the best asparagus. It stays fresher and is crisper when stored like that. So I suggest you check markets near you to find out if any of them use this method!



My veggies served over pasta. A quick, healthy, springy lunch!


Oh, and don't forget the Parmesan cheese. Yeah, that's pretty well smothered. Yum. :)

  1. Missy, that's how we sell our fresh asparagus when it grows on the farm.... in trays with water beneath so it drinks the water. Kind of like a Christmas tree!

    AND THOSE TREES IN BLOSSOM! Oh, hallelujah chorus, Missy Tippens! The browns and grays of winter wear old after a while, don't they??? Happy spring to you!

    1. Ruthy, y'all have been smart to do that! I don't know why I never thought of it. I've done it with celery before.

      I'm signing the Hallelujah Chorus with you! Literally. LOL We're doing it for Easter at church. :)

  2. Missy, I'm afraid even parmesan cheese wouldn't get my husband to eat English peas. I like them occasionally, but he has a very strong aversion. Must be a childhood thing.

    As for the asparagus, I agree. Even when I get it home, if I don't intend to use it for a day or two, I will wrap the stems in a wet paper towel and then slide a small plastic bag over that to keep them fresher.

    Oh, and those trees are, indeed, gorgeous. Spring is kinda sorta starting to spring around here, but we've had a gray week. Rain, fog, drizzle, gloom... Good weather for staying inside.

  3. Ah, Missy. Those pink trees do my heart good. If they were really here, my allergies would be driving me crazy (tree pollen) so I enjoy these all the more.

  4. Spring flowers! We're in the middle of a cold spell here in the Black Hills...we might reach temperatures above 20° today!

    I'm not complaining...I'd rather have our summers than yours...but it is wonderful to see the blossoming trees!

    And that veggie pasta dish looks fabulous! I'll have to use frozen veggies rather than fresh, but it will still be delicious. :-)

  5. I'm trying not to be jealous about the pink blossoms or the fresh peas...but it's not working. :-) So, yeah, still buried in show but it's being topped with freezing rain right now. Our spring doesn't really come until April and our blossoms more like May. So I'll be chowing down on frozen peas for a few more months. lol Love the idea of topping pasta with veggies liek that. Or over rice. Yum.
