One-Pan Quick Fish Dinner

I cooked this week! Twice already! ;) I thought I'd share one quick meal that I threw together the day of a grocery trip where I didn't arrive home until after 6 pm (starving).

Cod fillets (fresh if possible)
Asparagus or other veggies
Olive tapenade (I got mine at the olive bar in the deli section)



Heat some oil in a skillet and toss in the cut asparagus.



Coat the fish in olive oil and season lightly with salt and pepper.

Once the asparagus starts to get tender, remove from the pan. Add the fish into the same pan. Add a pat or two of butter just for flavor and to help get nice caramelization.

Sear one side of the fish, and then turn over to sear the other. Then cover the pan to allow the fish to finish cooking. I did maybe a total of 7 or 8 minutes (my fillets were pretty thick).

Right before serving, add the asparagus back in briefly to heat. Then top with the olive tapenade.




Now it's ready to serve! Very tasty!

  1. One thing I love about fish is that it cooks so quickly! Even with adding veggies, you're ready to eat in twenty minutes or less. :)

    I've never tried the olive bar at our grocery store. Hubby hates olives, so I usually get my olive fix from a jar kept in the back of the fridge. But is the olive bar different enough that I should try it?

  2. Jan, I don't usually buy mine there either. I buy regular jars. But this caught my eye while I was waiting for the guy at the meat department. I figured I'd give it a try! I liked it because it was several types of olives mixed together, already chopped up for me. Nice flavor.

  4. I some how always end up messing fish up. I grew up with walley, perch, and bass. Still trying to figure out how my grandma was so good at beer batter fish! Maybe I should give this a try. Might have better luck.

    1. Katie, it's so easy to overcook fish! I think frying is good because it goes so quickly it doesn't dry out the inside.

      This method worked really well with cod and I've done it with salmon as well. I also have a good recipe I've shared here before with salmon that started on the stovetop and then finished in the oven. Just 2 minutes each side on the stove and 5-7 minutes in the oven.
