Baking Therapy with Easy Coconut Cake


Mindy here and we are now down to the studs throughout the entire house. The only place drywall remains is in the closets.
 


This was not part of the original plan, but I love that the house is going to have a fresh start.

I must admit, though, that the renovation process can sometimes be stressful. And in my book, the best way to combat stress is to bake. Okay, so the flip side of that coin is eating, but we won’t go there.

On this occasion, I asked hubby what he was in the mood for. His request? Coconut cake.
Perfect! I’d just pinned a sour cream coconut cake recipe to one of Pinterest boards and I was eager to try it out. You all know how much I love cakes with sour cream in them.
So here’s what you’ll need:

1 white cake mix (I used Duncan Hines)
4 tablespoons melted butter
3 eggs
1 cup sour cream
1 cup milk
1 cup sweetened flake coconut
Preheat oven to 350 degrees.
Grease 9x13 baking pan with butter or spray.
Combine all ingredients except coconut in a large bowl, using an electric mixer on low speed for 30 seconds. Scrape down sides then continuing mixing at medium speed for two minutes.
Fold in coconut with a spoon or spatula and pour into prepared pan.
Bake 35-40 minutes or until toothpick inserted in the center of the cake comes out clean.
Remove from oven and allow to cool before frosting.

I wasn’t a fan of the frosting recipe that accompanied the original cake recipe, so I took this from another coconut cake recipe. This version is a little more like a spreadable glaze than a frosting, but yummy nonetheless.

1 cup powdered sugar
¼ cup heavy cream
1 tsp vanilla extract
½ cup sweetened flake coconut

Whisk all ingredients except coconut together until smooth then fold in coconut.
Spread over cake.
Top with more coconut.
And enjoy!

This cake was very tasty as is, however I do think I will change a few things next time. For starters, the original cake recipe called for a teaspoon of coconut extract. I did not have any and was not about to run into town, so I skipped it all together. That said, I think I will add it in next time for more coconutty flavor and/or substitute some of that Bakers brand coconut milk that comes in a blue can for the regular milk.

The original glaze recipe also called for coconut extract but, again, I wasn’t about to drive into town for that one thing so I used vanilla instead. Ah, the things one learns when they go rural.

But I’ll take it. I mean, where else can Maddie enjoy her post as top deer/cow watcher when we go for our evening drives?

And I love taking in the views unobstructed by buildings.

    This cake sounds scrumptious. I think I need to venture from my usual chocolate standby. Next potluck I'm going to try this.

    Are you going to make your timeline with the reno? I think you said you wanted to be in the house by Thanksgiving...or is that my imagination?? And how far is a trip to the store?

    1. Nope, no surprise here, Kav. ;) And it is good to venture out occasionally. Though chocolate will never go out of style.

      Right now, it's looking like we may be able to move into the big house sometime in October. If they finish it sooner, even better, but I'm not going to hold my breath.

      It only takes about 10-12 minutes to get to the store, but on the day I made this cake I'd already been into town twice so I was not about to go again.

  2. That cake looks delicious, and coconut is my husband's favorite! This will be coming to our house soon. :)

    My favorite way to beat stress is to dream about our home in the Hills...no neighbors within sight, quiet (except for the wind in the pines), and a porch to sit with my tea and drink it all in.

    Someday it will be a reality, but until then, dreaming about it works!

    1. Jan, the sounds like your husband and mine have similar tastes while you and I share daydream alike. That's exactly what I used to daydream about before we moved. The house, life in the country... And now I start every morning off on the porch with my tea. Hmm... I guess I'm living the dream. And before you know it, you will, too.

  3. Mindy, I love, love, love coconut cake! This looks marvelous, and look... IT'S A TUESDAY AND I REMEMBERED TO COME OVER HERE!!!!

    I use coconut milk in place of milk/water for coconut cakes and coconut custard pie... it makes a really nice difference!

    And then I made the bad mistake of using cream of coconut instead of coconut milk.... and that wasn't so great! Cream of coconut is laced with sugar and thickened. So the sugar ratio was insane.

    This sounds marvelous, and I can't wait to see what the house/ranch comes out like.... this is like our own personal Chip and Joanna!!! I'm so happy for you!

    1. Yes, the coconut cream would be rather overwhelming. But doesn't Bakers make a coconut milk that comes on a blue can? Nowadays, you find coconut milk right alongside almond milk in the dairy section, but that's not the same stuff.

      I can't wait to see how things come out at big house either. If only it could be condensed into a one hour show. :P

    The house looks great too. I didn't realize it had so much space. Of course maybe it didn't when it had walls. LOL

    1. No space at the camphouse, plenty of space at the big house, Mary Cate. Our middle daughter was here last week and when she saw the house, she said she thought it looked smaller with the walls gone. Go figure.

  5. Mindy, that cake looks sooo good!! I've never made a coconut cake. Really need to change that.

    I can just imagine how wonderful the house is going to look!! Hang in there. I'm sure it's stressful but will be worth it.

    1. Missy, this coconut cake is a good place to start because it's easy. And, you know, I think about Fixer Upper and how the people can't see anything but a computer rendering until reveal day. I'm not sure which would be more stressful, being involved in the day-to-day process or no involvement at all. Overall, though, it's not too bad. I just had decision making. Luckily, hubby is really good about walking me through things, asking questions that help lead to a choice I feel is right.
