An Appetizing Meal

Mindy here. Well, things are chugging along at the big house. Demo efforts were reignited when we learned that the rather odd texture on the walls--it's very rough and downright sharp in many places--cannot be matched or mudded over. So all of the remaining sheetrock has to be removed..
The electrician has been working on new wiring.
Throw is the summer heat and, by the end of the day, we are all tuckered out. Sometimes, the last thing I want to think about is dinner. It's those times when deciding what to fix is the biggest challenge of all. So rather than settle on one big item, I sometimes opt for a variety of little things. After all, part of what makes appetizers so wonderful is that you can try a little bit of this, a dab of that...

This beautiful hodge-podge was our dinner the other night. I had a few potatoes left over that I needed to use, so I baked them for potato skins, then filled them with cheese and bacon.

These little babies are called Armadillo Eggs.
Jalapeno stuffed with barbecued chicken and wrapped in bacon. We picked them up at our local supermarket and boy were they yummy.

We also found these Yum Yum Stix on a recent trip and decided to give them a try, too.
They were amazing, y'all. I will definitely be buying these again.

Throw in some sweet summer cantaloupe...

And let's eat.
My taste buds were happy, my tummy was happy... 

But you know what made me happiest of all?
This little guy came to visit his grammy.
And I love, love, LOVE that.

  1. I'm overwhelmed just looking at your reno pictures. You should be featured on a HGTV show! And working in that heat?????? Ugh.

    Love your stuffed potato skin idea. I've never done that. I'm thinking scrambled tofu would make a mighty fine stuffing. LOL Or vegetarian chili with the potato being the bowl.

    I'm not an appetizer person at all. Not fancy dancy and my meals are pretty simple. Even when I have company, I never think about making appetizers. I need to up my hostessing, I guess. I'm usually just grateful to throw together a main course and a dessert. :-)

    1. Kav, I tend to be rather indecisive when it comes to food. I want it all, therefore I often end up making more than one thing. That's where appetizers are my friend because they're small bites. I can have my potato skins and armadillo eggs, too. :P

      Chili on your potato skins is an awesome idea! Lots of people put chili on potatoes. Top that will a little bit of cheese and you've got "fancy" finger food.

      As for the heat, since the house is air conditioned, it's not that much of a problem. Well, except for the electrician working on those boxes in the garage. And the guy painting the outside of the house. Yeah, there's a reason they show up early. Gotta beat that heat.
