One-Eyed Egg: A Father's Day Memory

This last week of school involves lots of work (mental - report cards & physical - packing up for a move to a different classroom) which means lots of late nights and food grabbed when you're near to starving.

Eggs have been my go-to meal.
I have come to love a fried egg sandwich.

But, I can't make an egg sandwich without thinking of my father. When he was in charge of cooking, this is what we got. Obviously, it's pretty easy.

1. Tear a hole out of the center of a piece of bread.

2. Coat the pan with melted butter and heat.

3. Place the bread in the pan and crack the egg into the center.



4.  When the egg has begun to cook through, flip it to finish on the other side.

Enjoy!




We're studying mythology, so I'm dubbing these Cyclops Eggs!

One difference - my egg is made with Dave's Killer Bread. Thanks to Tina Radcliffe for turning me on to the awesomeness that is Dave's bread.

  1. Ohhhhh...across the pond that's called Toad in the Hole and that brings back childhood memories. Haven't thought of making one in my adult life -- but why not? Especially with some Artisan bread. (And back in the day my mum would make this using bacon or sausage grease instead of butter. I was a carnivore back then and I loved it.)

    Last week in school is a bear, isn't it? And moving classrooms. Ugh!!!!! Praying your week goes smoothly.

  2. And here in Texas, it's called a Bullseye. LOL! Guess there's some variation of this comfort food everywhere you go. We still make them on a regular basis, Mary Cate.

    I can't believe you're just now getting out of school. You must go back much later in the fall. We usually start before Labor Day.

    1. Our students usually start back the Wednesday after Labor Day (which means the teachers are back in sometime mid-August to set up).

  3. We've always called this "toad in a hole"! Since it's almost suppertime and I've been writing all day, I think this sounds like an appropriate supper for a hot summer day, don't you?

  4. I love these. We called them egg in a basket. My aunt used to make them for us. :) And now, my husband often orders it at Cracker Barrel.
