Life Change = Pork Tenderloin Change

Greetings from the ranch!

Phase one of our big move is finally complete. For the most part anyway. We're still waiting on internet, which has us relying on our phones. At least until we completely lost service. 
Can you imagine? No internet, no email, no text, no phone...
Fortunately it only lasted for a day.

Yes, it's been an adjustment, but we've been so busy that you kind of don't notice. In the last two weeks I think we've only stopped long enough to eat or sleep. Because before things were totally put away at the camphouse, it was time to begin work on the big house.

Here's a glimpse of our demo projects.

Bye-bye dark wainscoting and parquet wood floor.
 And where a brick wall once made a courtyard, we now have a view.
I tell ya, you give a couple of strapping young lads some sledgehammers and it's amazing what they can do.

But all that hard work makes for some hungry workers, which means one of the workers--okay, supervisors--has to pause to fix dinner.

On this night, I was craving grilled pork tenderloin. But I wanted something different. And what better way to do that than to play with some spices.
Cumin sounded good, so that was my starting point.
Here's what I came up with.

3/4 tsp cumin
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
1/2 tsp chili powder

Mix that all together.
***Note: A pork tenderloin package has two pieces of meat. Since I was experimenting, I seasoned one piece with my usual salt/pepper/garlic/paprika blend, then put the cumin mixture on the other. So if you're coating both pieces of meat, double the amounts above.***

Now just sprinkle the seasoning over the meat and give it a nice rub.
The one in front has the cumin blend.

Place seasoned meat on a heated grill.
  And cook until internal temperature reaches between 145 and 160 degrees Fahrenheit.
The verdict?

The new seasoning was a hit. Everyone loved it. Tender, juicy, flavorful meat.
Yum!
And if you're watching your fat, pork tenderloin is as lean as grilled chicken breast, so it's a win-win.

So...there has been one other thing keeping us busy.
 You've heard of a two-dog night. Well, this was a four-snake weekend that started with this non-venomous fella slithering across the camphouse porch.
Luckily our snake-loving son was there to save the day.
Isn't he dressed appropriately?
But I'll consider it all trade off, so long as I get to hang out here.

  1. I can't wait to see the renovations as they go! DEMO DAY!!!!! So fun, Mindy! And I love snake boy, although snakes around here that show themselves get depopulated.... they like to find a way into my old basement, and I don't like surprises.... If you don't contribute to the household income, you do not get to live here.

    That's my rule! :)

    We had a squirrel in the basement once, too, a baby one... do not ask me how.

    I have no idea. Nor do I really want to know.

    I'm excited to see things being revived and this old place looks so gracious. Yay for your family!!!

    And I love pork tenderloin, so win/win!

    1. But, Ruthy, those good snakes eat the bad snakes! Of course, we don't want them in the house. :)

    2. Ruthy, I love snake boy, too, because he handles the snakes for me. If he's not around, though, hubby just breaks out the shovel or the .22. So long as the snakes are gone, I don't care. And they'd better not get into the house. I can see it now. Everyone's gone but me and I find a snake in the house. I'd shoot all right, but I'm not sure how good my shaky aim would be. Might be repairing a lot of dry wall, etc.

      You know, we'd always dreamed of building a home down there, but when our youngest daughter got married there, I kind of bonded with the house. It was after that we decided to renovate and make it our own. It'll take a good 4-5 months, but it'll be worth it.

  2. So I was enjoying my little virtual escape into the Texas countryside until that...shudder...snake picture. You need to post warnings so unsuspecting readers won't have heart attacks or choke on their hot chocolate or lose their breakfast or run screaming from the room causing them to stub their toe. Seriously, there needs to be some reptile accountability here at the cafe! I am crossing Texas off my travel bucket list. Humph!

    1. You're right, Kav. I should post warnings. I will try to remember that in the future. Did you really stub your toe?

      BTW, you should not cross Texas off of your bucket list. Just the rural parts. You'd do great in Dallas, San Antonio, Ft. Worth, Houston, Galveston...

  3. I love to play with spices but not with snakes! :) My hubby, however, loves snakes. He would have been right there with your son.

    I didn't realize y'all were going to do some of the demo work! How exciting! I hope you'll share photos as you go along.

    Thanks for the idea to buy pork tenderloins. I don't have any in the freezer right now.

    1. Okay Missy, we'll let your hubby and #1 son play with snakes while you and I play in the kitchen. And I'll just say right now that never the two shall meet. I've cooked a lot of things, but snake is not one of them. I don't care how it's seasoned. That said, at least I could be sure it was dead.

      Yes, we did a bit of the demo work, but not all. We're on hiatus for a few days to trek back to DFW for #2 son's graduation. No telling what things will look like when we return.

    AH, yes, pork. Looks delicious, but I kind of lost my appetite at 4 snakes.

    1. Yeah...so I was thinking of you as I wrote this post, Mary Cate. The other three were copperheads. I HATE copperheads. Snake boy says it's because we have so many frogs due to the pond. So why can't they stay down by the pond? No, scratch that. I enjoy the pond. Unhindered by copperheads. Sigh. Guess I'll just have to change my name to Annie Oakley.
