Strawberry Scones

With spring comes strawberries!



I found these at our local Sam’s Club over the weekend, and after taste-testing one (I love the free samples at Sam’s!), I decided they were worth the price I had to pay.

Because nothing says “Hello, Spring” like fresh strawberries!

At the same time, I’ve become gently addicted to British mystery and travel shows on Netflix, which started a craving for scones.

So you know what comes next – Strawberry Scones!

I started with my favorite scone recipe, and substituted strawberry bits for the raisins:

Strawberry Scones


Ingredients:
1 cup sour cream
1 teaspoon baking soda

4 cups flour
1 cup sugar
2 teaspoons baking powder
¼ teaspoon cream of tartar
1 teaspoon salt
1 cup (2 sticks) butter
1 egg, slightly beaten

½ cup strawberries, diced very small

Preheat your oven to 375°.

In a small bowl, blend the sour cream and baking soda together. Set aside.



In a large bowl, mix the flour, sugar, baking powder, cream of tartar and salt together, stirring until blended.

Cut in the butter, and stir. Add the sour cream mixture and egg, and mix just until moistened.



Stir in the strawberries.



Turn the dough out on a floured board and knead briefly. Pat into a circle, about ¾” thick.



Cut into wedges (I never make two the same size!), and lay on a baking sheet, two inches apart.



Bake 10 to 12 minutes at 375°, or until golden brown on the bottom.




Now that you have your scones, bring them up a notch! They make a great base for strawberry scone shortcake!

Layer a scone, then sliced strawberries, and top with whipped cream.

Yes, it's their birthday... and we're celebrating Brody (age 7, one of the 2010 babies that I had here.... 4 babies here and one at my son's, it was a BUSY TWO YEARS of raising babies and they're all so smart and successful in school that I'm glad we hunkered down and rocked those babies and read them stories and taught them "Wall" lessons. Seven years old, where has the time gone????) But back to dogs, I love the grown up Thatcher even more than the puppy. What a gorgeous fellow! And the scones would make the perfect shortcake for strawberries, Jan! I love a biscuity type shortcake rather than sponge or angel food because they get soggy. I like that biscuity bottom. (Should I rephrase that? Our Southern gals might misunderstand!!!!)

    1. So many babies in one year! What fun! I remember when they all graduated from Ruthy pre-school and went off to school. But they haven't left you behind, have they?

      You must explain what "Wall" lessons are, though. I think I know what you mean...

      I had to snicker at the "biscuity bottom." Maybe we should say "biscuity base" instead. :)

      And yes, I like biscuit-type "bases" for my strawberry shortcake, too!

  3. Oooh, Jan, these look delicious!! I love fruit in scones. My favorite lately has been orange scones (not homemade--I bought at Panera or Starbucks).

    1. It was the orange scone at Panera that gave me the thought that this might be good. We have a new Panera in town, and I've become a regular there. :)

  4. Oh, goodness, Thatcher is a heart-throb. He needs to star in his own story, Jan. Amazing how his colouring has changed since puppyhood!

    Strawberries...blissful sigh. We got some from Florida a week ago and they actually tasted like strawberries (as opposed to sawdust!) They aren't ripe here until end of June so our first strawberry shortcake is usually Canada Day. I usually use Angel Food Cake for the base, but this strawberry scone looks like a nifty switch up.

    1. He is a handsome boy, isn't he? I'm on a Facebook group for Corgi owners in our area, and a few of his littermate's owners are there, too. Every year on their birthdays, we talk about what a great litter that was!

      And I'm used to being disappointed by these early strawberries, but since the store was giving out free samples (1/2 strawberry per person!), I was able to give them a try before buying. I'm doing them out a few at a time...

  5. Happy Birthday to Thatcher! Fenway just celebrated his 9th.

    These scones are perfect timing. This weekend, Barnes & Noble debuted their new strawberry cream drop scones. SO DELICIOUS!
    They have white chocolate yogurt drops mixed in.
