Nachos for a Crowd (or only a few)

I'm not sure I've seen a happier bride.

The groom had a few nerves, but not too bad,


Especially when he and his best man got a chance to have some fun for the photographer before the wedding. :)


But Jacob and Katie are married now, and the wedding was perfect.


We even had the groom's favorite for the wedding cake - Cheesecake!

I didn't get a picture of the nachos, though. I remembered to take the emergency kit to the church: needles, thread, double sided tape, duct tape, stapler, bandaids, alcohol wipes.... But no camera.

So you'll have to use your imagination!

This is Katie's recipe, and it was super simple and delicious!

Nachos for a Crowd (or only a few)

ingredients:

ground beef
taco seasoning
nacho cheese

tortilla chips

Toppings:
sour cream
chopped onions
chopped tomatoes
shredded cheese
jalapeno slices
black olives
lettuce


The amounts you use depends on the number of people you are serving. We were planning for 80-100 people, so we used 12 pounds of ground beef. For a family, you'd use only one pound.

Brown the ground beef until it's thoroughly cooked. Add the taco seasoning (1 package per pound of ground beef) and cook according to the package directions.

Add the nacho cheese - the canned stuff. We used one #10 can per 6 pounds of ground beef.
So one pound of cheese, or a 12 ounce jar or can, per pound.

Heat the cheese and ground beef together and keep warm while serving. We used my big roaster.

Serve buffet style with the chips and toppings.

This was a hit. So informal, and everyone just helped themselves.

    1. My emergency kit has been useful for two weddings so far. But the one thing I forgot? One of those emergency laundry stain removers. Lipstick smudge on the dress before the wedding. :( But a clever fold covered it. :)

  2. This would be a crowd pleaser around here, and I might just do it next weekend when we'll be painting signs for the farm stand! What a fun buffet blast that would be!!!

    And I love the wedding pics. Jan, they look wonderful, and so happy! Congratulations again!

    And what is the cheesecake in? Are those paper cups or chocolate "bags"??? I love it, either way!!!!

    1. This is so easy that you can whip it up in a short time - especially if you brown and season the ground beef a day or two early. Then it's just heat and serve.

      And painting farm signs! Spring is coming!

      We served the cheesecake bits from Sams. They come in paper cups. Easy peasy.

  3. Love this peek into your wedding festivities. The wedding dress is gorgeous. And I'm still awed by the fact that the weather cooperated for you all. I was hoping to see a snapshot of The dogs in their wedding finery though...one of them was the ring bearer, right? Or maybe a flower girl?

    1. Katie and Jacob threatened to have their dogs in the wedding - but not seriously. Katie has two dogs - a blue heeler named Bond, and a labrador/border collie mix named Sparrow. :)

      And yes, the dress was perfect!

    1. You know how weddings are - the wedding party and parents never really eat anything! So I had four chips on the big day. LOL!

    I don't think I've ever eaten cheese from a can, but this sort of reminds me of when they do nacho day at school. Big vats of cheesy stuff (that I think comes in a can).

    Yum, on the cheesecake. Looks divine!

    1. Yup. Just add some ground beef to that big vat of cheesy stuff. Delicious!

      And the cheesecakes were so simple. The hardest part was taking them out of the freezer at the right time.
