Southwestern Cauliflower Bake!

This is a super easy win/win/win food that should be on every party table from this point forward...

The blend of sharp cheeses, cauliflower and crispy-taco-seasoned crushed corn flake topping made this a crowd pleaser at our house, but the men went ballistic over it, so you know it's good!

For this dish I pre-cooked the cauliflower slightly.

I steamed it in a big kettle with a very little bit of water in the bottom, just enough to soften the cauliflower a little... I had three small heads that weren't big enough to sell, so I had fun with them in the kitchen, and I'm so glad I did!

Then I tossed it with this amazingly delicious cheese sauce:

1 cup heavy cream
8 oz. butter
4 oz. cream cheese
2 cups shredded sharp cheddar cheese
1/2 cup Parmesan (grated or shredded)
Salt and Pepper to taste (I used extra pepper)

Warm these until butter and cheese blends into heavy cream. Add in 2 cups sharp cheddar cheese (I used extra sharp cheddar cheese) and 1/2 cup Parmesan cheese. Whisk the cheese in until it melts. (I forgot to get a pic of this, so I'll describe it for you, darlings.... cheesy! :)

Toss over the steamed cauliflower... pile into a 13" x 9" pan.




Top with seasoned corn flake mixture.

1 stick (8 ounces) butter, melted
3 cups crushed corn flake crumbs
1/2 envelope Taco Seasoning mix (or 2 tablespoons Taco Seasoning from jar)

Mix together, spread over cauliflower in pan.


Bake at 350° for about 20-30 minutes until topping is crisped... and then serve and enjoy!

This is an amazing dish. I hope you try it. I hope the nice people in your house are just as happy as mine were! Unlike the wretchedly bad, horrible, no good cauliflower hash brown recipe I tried last week.... this was amazing!

    1. Missy, this was our first attempt at cauliflower and it was a wonderful success! So we'll be expanding the cauliflower sales for 2017... and moving into cabbage and broccoli, too, for late-season sales. How fun will that be???? (and by fun, I mean work for Dave and Seth... but they're happy, so that makes it fun, right????) :)

  2. Yummy, I love cauliflower. Did you know that we have huge fields of cauliflower in Arizona at this time of year. Yum. I used to take my kindergarten classes out to the "farm" and the workers would show them the whole process and then give us boxes of cauliflower to take home. So fun.

    1. Sandra, for real? Where did they grow them? We saw a few kind of challenged farms outside of Phoenix, but we noticed that the signs for "local" produce all mentioned California! Tell me more!

    Love your fall pictures. We're having some lovely weather up here - warmer than normal and lots of pretty colours against blue, blue sky. Great putting the garden to bed weather!

    1. Kav, I agree on the weather! We've been a little spoiled and we know that other shoe will fall... and the leaves are tumbling to the ground in today's brisk wind!

      The cornflakes make a marvelous topping. Crispy, crunchy, a real nice accompaniment to the softer, cheesier cauliflower. SO GOOD!!!!
