What's Your Favorite Chicken Soup Recipe?

When the chill hits the air, my husband starts looking for chicken soup for lunch.

A little history. This man normally works from 7am until quitting time with no break for lunch - hard manual labor (He's currently remodeling a bathroom). I don't know how he does it. I'd pass out if I went that long without eating!

But last winter, I had some leftover soup one day. He came home midday to walk the dog, and he decided to have the soup heated up in the microwave.

Thus was born a new tradition.

So now, when I make chicken soup, I make a lot extra so he can have a week's worth of lunches.

He's a plain tastes kind of guy, so my soup is fairly simple.

Carrots, celery, garlic and herbs into into the pot.




Chicken broth to simmer.




Add the chicken and pour into these cool little storage cups.




Depending on whether he's having rice or noodles, I make those and store separately so they don't soak up all the broth and turn to mush.



I get lots of "good wife" points for this.

  2. Well..no fave chicken soup recipe for me. My veggie equivalent is lentil soup. I put celery and carrots in it as well. And potatoes. Yum. In fact I just made my first batch of the season yesterday. Guess what is on the menu for supper tonight? Along with some homemade Irish Soda Bread. Double yum.

    I can't believe your husband does that kind of work without eating a hearty lunch! Does he have a humongous breakfast to carry him through the day?

    1. Kav, believe it or not, he only drinks a cup of coffee and has a glass of Carnation Instant Breakfast.

      I love lentil soup! I've never added potatoes though. Yum. And I'd be jealous of your Irish soda bread, but I have some Monkey bread with my coffee.

  3. Cate, I love chicken soup! I love it any which way, and it's probably that I just love chicken broth and chicken, so if it's in soup.... Yay! What a wonderful idea. And I like rice in my soup, or pasta, or neither, just loaded with veggies.... MMMM....
