Double S Ranch: Elsa's Cheesy Biscuits

WEEK TWO OF RELEASE MONTH!!!!!

These deliciously wonderful warm creations were inspired by the cheesy biscuits at Red Lobster restaurants... but I like Elsa's take on them even better because what better way to impress the cowboys and hands of the Double S Ranch than with stick-to-your-ribs biscuits?

Elsa's not as comfortable in the kitchen as Angelina (our feisty detective-turned-ranch house manager in "Back in the Saddle") but she's not afraid to jump in and try new things... and those cowboys were mighty happy with these biscuit offerings!

And yes, I just might have shared this recipe with Elsa (our delightful heroine in "Home on the Range") because sharing is just plain nice! And if you leave a comment below... Well, I love Cheddar cheese biscuits, and the Red Lobster version is wonderful, but I've added a new twist to this beloved favorite.

Basically you do the same initial recipe....



2 cups Bisquick
1/2 cup shredded cheddar cheese (the more "bite" the better)
2/3 cup milk.

Mix all and drop by rounded spoonfuls onto a lightly greased baking sheet. (Okay, right here I discovered that I need to spray two of my baking sheets with Pam-type spray for this recipe or the bottoms cook too quickly. I've got several pans, and some are air-bake style, some are traditional style, some are darker, some are lighter, and I see no rhyme or reason... but now I've taken to just spraying the pan lightly and that works on all the pans!)

Bake at 375° for about ten minutes (again, ovens vary, so watch for biscuit to be pale with hints of golden brown, don't overbake.... Overbaked biscuits become dog treats here.)

THEN:

OH, THEN!!!!



While biscuits are baking melt 2 sticks butter.
Add 1/3 cup Parmesan cheese
1 Tablespoon parsley
1 teaspoon (or more) garlic powder or granulated garlic

Mix together.



 Roll warm rolls in this mixture, making sure some of the Parmesan clings to top of biscuit.

Serve.



TO DIE FOR.

This is not a carb-friendly recipe. When they're warm, my thoughts of a carb-low-friendly diet fly out the window on a wing and a prayer because I could literally sit and eat a batch of these all by myself.

The tweens and teens around here love 'em... the little kids love 'em... the parents???

And there is no such thing as too much butter when you're talkin' biscuits!

And this is GREEN TOMATO PIE from one of my friends.... I've never had it before, and it's good! It's spiced like apple pie, and amazingly delicious! WHO KNEW?????

So that's what's going on at the farm.... and what's going on at the ranch in Central Washington.... Good food, faith, fun and fiction!

  1. Awwww, that picture of the baby lifting the pumpkin brought back memories! Not for the herculean effort but the lack of hair. My babies always had tons of hair, some needing haircuts right after birth, and then I had our fifth and he inherited all of my Anglo genes. Bald as a cue ball. It was SO ODD. I could see veins in his head! It was quite disturbing! And he's a blondie so he didn't really grow hair for 18 months. Even ODDER. Lololol.

    I posted a picture of your beautiful book in the Avid Readers of Christian Fiction group and aroused jealousy for having a copy in my hot little hands before release day. Thanks those Multnomah folks for me!

    1. The Green Tomato Pie is kind of amazing... it tastes like apple (cinnamon and nutmeg) and the green tomatoes really have no flavor, so they're a conduit for spicey/sugary goodness!!!! So funny!

      She gave me the recipe so we'll play with it soon, but it was honestly DELICIOUS!!!!

      And the baby thing is funny. Most of ours have been bald babies... But a few dark-haired ones got their hair earlier.

      So is that a genetic thing? Dark hair grows earlier?

      Kind of weird, right, how those chromosomes work????

  3. Over 20 years ago the manager at a Red Lobster gave me the recipe for the biscuits, but it didn't include parmesan, just real butter, parsley flakes and garlic salt. But hey, cheese on top can't hurt! I would live to win a copy of the book.

      I can't do that, but the minute I saw the covers, I was head over heels in love.

    1. Tracey, we decided to do old-fashioned "Farm-Friendly" pricing because we've cut the overhead to nothing. Folks are coming to our yard, our farm, and they get to deal with the farmer, LOL! So fun!!! We decided that charging high prices and throwing half of the crop away was SILLY!!!! So we're going in the other direction, no pumpkin over $5... and folks are loving it. And we're loving them!
