Avocado Potato Salad

I know I mentioned this here once before. I did a search, but I don't think I mentioned how I made it or how easy it was to do. I did a search and didn't turn anything up, so I thought I'd share.

My husband decided at the last minute on Monday that he felt like having potato salad with 4th of July dinner. By then, the deli whose potato salad he likes was sold out.

I offered to make this, but he declined (He's not a fan of avocados). So I made it for myself anyway.

Easy peasy, as Ruthy would say.

Step 1: Boil the potatoes. I used red potatoes and skinned them first. You could leave skins on if you like them that way. I boiled them until they were cooked but still firm. Let them cool.







Step 2: Thinly slice onion. I used a mix of red and vidalia. I cooked it in a fool packet in the oven for a short time, just until they softened. You could do it raw, but I find this brief cooking keeps me from tasting onion for days!

Step 3: Mash an avocado in a bowl.





Step 4: Add some vinegar and oil to taste (I used Braggs Apple Cider Vinegar). Mash it in with the avocado.

Step 5: Add to the potatoes and stir.

Step 5: Enjoy!  Or, if you prefer it colder, chill, then enjoy.




We're having our first real heat wave of the year so a cool meal is greatly appreciated!

  1. Now this is another something I can wrap my taste buds around. where did you first hear of this recipe? Black olives. It needs chopped black olives. Mmmmmm.

    1. I made it up, Tina. One night I had a bunch of boiled potatoes and I didn't want to put mayonnaise on them so I mashed an avocado instead. I didn't expect to love it as much as I do.

  2. Oh my stars, Cate, this sounds marvelous! Cool and delicious and crazy good!!! And my family loves avocados! And why isn't there an e before the "s" in plural avocado? Why is Google making me change it? WHO DESIGNED THIS LANGUAGE??????

    We're in the 90's here again today and while that doesn't stop work from happening, it means fridge food or what gets cooked outside.

    No baking when it's this hot. I'm a panty-waist when it comes to heat. And red-faced, besides, so not pretty!!!

    Cate-girl, are you loving vacation?????? I'm so happy for you, let's pump those summertime words!

    1. Same here. When it gets like this, I don't even want to think of cooking. I know we probably sound like wimps, but I only have AC in my bedroom, so when it hits humid 90s, my kitchen resembles one of Dante's levels. Even the refrigerator rebelled. I had to run out and buy ice last night because it was approaching 60 inside my refrigerator.

    3. We don't have central air, either. I have window AC's in two bedrooms and one in the kitchen, just to take the edge off, but I cook on the porch or we fire up the grill.

      I'm amazed that you don't have another AC unit, but I know not all of those older buildings have the right windows or the right wiring.

      Come visit me, anytime. I'll put you up in the sparest of spare rooms with A/C and I'll cook on the porch for you! Fun in upstate!!!

    4. We have the two in the bedrooms, but you're right about windows and wiring. The back kitchen window is a fire escape window so no can do that. My husband ran dedicated lines to the basement for one AC unit, the other one is fine so long as I don't try to do laundry. Win win.

  3. Oh...what an interesting combination. I'm an epic fail potato salad maker. I know, it's simple but I seem to mess up the potatoes all the time. They're two mushy and then I mess up with how much mayonnaise I put in and...oy...it's embarrassing, but there you go. Like the idea of the avocado in place of the mayo. Yum. Wonder about adding celery for a bit of crunch? This could be fun to experiment with. Especially since we've got that heatwave here to and I don't have any air conditioning. And my poor fridge makes the most outrageous grumblings when it has to work overtime. Happy vacay writing!

    1. I think celery would work, Kav.

      As for the mess - blame the potatoes! Seriously, I find that sometimes they take forever to boil and sometimes they boil quickly. Same with roasting. I suspect it has something to do with their age, but that's just a guess.

      Honestly, making regular potato salad scares me. This seemed easy. Or maybe I just jumped in without thinking.

    Tina suggested black olives...I think bacon would be a great addition. Because, you know, everything is better when you bacon it!

    1. I just cooked a pound and a half of Wright's thick bacon on the porch... I'll supply the bacon!!! I should show you guys how Dave's mom (and now I) make her "Hot Potato Salad"... it's her version of German potato salad, no sugar, so savory and not sweet.

  5. Bacon would work, Jan. I was actually wondering about slices (or chunks) of hard-boiled egg. That would make it a meal by itself.

    I had intended to have this with a salmon burger, but plans changed (as in I sampled this as I was making it and ate a whole bowl before I cooked the burger).

  6. This sounds yummy, Mary Cate. I do love me some avocado. I like Jan's suggestion of adding some bacon, too. My guys might even be all over that one.
