Creamy Macaroni and Cheese for One

You know those blustery early spring days when the wind whistles out of the north, spitting snow everywhere?



Those days when the corner that spring is "just around" seems awfully far away?



When it's lunch time, and you only have a few minutes to fix something?

And you're craving...I mean craving...something hot, creamy, and delicious that won't break the budget?

That's when you need the ultimate comfort food!

Creamy Macaroni and Cheese

ingredients:

1 cup chicken broth
1/2 cup elbow macaroni
2 Tablespoons cream (or milk)
1/4 cup shredded cheddar cheese

salt and pepper to taste
garlic powder or onion powder (optional)



Bring the chicken broth to a boil in a medium sauce pan. Add the elbow macaroni, bring back to a boil, and simmer for 7-10 minutes.

When the macaroni is cooked to your liking, most of the broth will be gone - absorbed by the delectable, tasty pasta. :) Remove the pan from the heat.

Add cream and stir. Now add the 1/4 cup shredded cheddar and stir some more.

Season with your favorite seasonings (I use pepper and garlic powder) and enjoy!



All right, you can share with someone if you want to. I tend to make a meal out of this bowl of creamy, cheesy goodness.

  1. Ahhh! Comfort food! I adore mac & cheese but my mother's recipe that I like to make does take a little effort and a fair amount of time. I like the sound of this -- something I could whip up just for myself. Yum!!!

    1. This is quick and easy...and delicious. Yum! This recipe just jumped out of the pot when I was craving mac & cheese one day last week. Those kinds of recipes usually don't turn into something I want to share here at the Cafe!

  2. Mac and cheese is the best comfort food. I never thought of making a single serving or this way. Must give it a try. I have all the ingredients in the house -- except milk instead of cream and veggie broth instead of beef broth and I might just add more than a 1/4 cup of cheese...that seems measely. LOL something nice and hot for lunch on this very cold date. -9 right now but going up to about 3 which is good. We've had some warmer days and the snow has started to melt....in time for the major snowstorm on Thursday. Wahhhhhhh!

    1. Yes, definitely try this for your lunch, Kav!

      And the cheese seems a little low, I know, but it turned out so creamy made with cream. With milk you might need to add some butter.

      Then just add cheese to your heart's delight!

      We're having a beautiful spring day today - windows open, birds singing - but tomorrow things are supposed to change drastically. Again. So we'll enjoy the warmth while we have it. :)

    1. The thing with this recipe is that it's easy to double if you need lunch for two. :) But I'm usually on my own for lunch, and need something quick so I can get back to work. This dish is perfect.

  5. Oh, I cannot wait to try this, Jan. This single-serving size is one I'm bound to make again and again because I love mac n cheese. And if I use Dreamfields pasta, it's THM approved. Woo-hoo!!!

    I love mac-and-cheese. I know it's probably not good for us, but I don't care. It tastes good. It tastes marvelous. I love marvelous things!!!!

    Jan, are you so excited about wedding stuff and spring stuff and a glorious Easter?

    It is freezing cold and windy here, and when I was washing windows earlier I was pelted with hail and snowflakes. That was inhospitable!!! But then I made a face at it and hung the freshly ironed curtains, and it was a job well done.

    Should I mention I've been meaning to iron and re-hang those curtains for 18 months???

    Naw. :)

    No one needs to know that, LOL!

  8. I love the idea of cooking the pasta in the chicken broth. Kav mentioned veggie broth and beef broth and I'm wondering if those would make nice variations. Veggies could make it primavera too. :)

    Speaking of primavera, our first day of spring included snow and wild wind. At least the sun came out.
